Cozy Homemade Stuffed Pepper Soup

I love the taste of stuffed peppers but they can be a little time consuming to make the filling, stuff the peppers and then cook them. That is where this easy to make, hearty soup comes in! Packed with all the traditional stuffed pepper flavor but made in one pot in about 40 minutes I make this recipe whenever I have the craving for stuffed peppers! This is a great recipe for a busy evening because this soup is made in just one pot so the clean up is a breeze!

Ground Beef – Ground beef makes this soup nice and hearty. I like to use lean ground beef so that there isn’t a lot of fat to drain off. If you prefer you can also use ground turkey or ground chicken. Italian sausage is another great option to add even more flavor. Just make sure if you use a cut of meat with more fat you drain it so your soup isn’t greasy.

Diced Tomatoes – Canned diced tomatoes add great flavor to this soup. If you prefer the petite ones they work well too. If you don’t want tomato pieces in your soup you can use plain tomato sauce in place of the diced tomatoes.

Beef Broth– This makes a great base for the soup and adds a ton of flavor. You can also use chicken broth, or vegetable broth if you prefer.

Bell Peppers – I like to use a blend of red, yellow and green bell peppers for this soup. Yellow and red peppers add a nice sweetness, while green peppers add that classic pepper taste.

Onion– Diced onion adds tons of flavor to this soup. I like to finely dice mine so it mixes well into each bite. You can use a yellow or white onion for a lot of onion flavor or use a sweet onion if you prefer that taste.

Rice– Rice makes this soup nice and hearty. I like to use white rice but you can also use brown rice. It takes a little longer to cook and can soak up more liquid so you may need to adjust the amount of broth accordingly.

Garlic Salt – You can use garlic salt or if you don’t have it you can use garlic powder and salt. You can also use fresh or minced garlic if you prefer.

Oregano – Dried oregano kicks up the flavor of this stuffed pepper soup. You can also use fresh oregano, or dried Italian seasoning.

Pepper– Salt and pepper are always important for flavor and this soup is no exception. You can start with a little bit of pepper and add additional to get the flavor you desire.

Here’s How to Make Stuffed Pepper Soup

These easy directions will have you enjoying a nice big bowl of soup in no time!

Place the ground beef, diced onions and diced peppers in a large pot and cook over medium/high heat.

Crumble the beef as it cooks, and continue cooking until it is browned all the way through.

If your beef releases a lot of excess fat drain it off.

Add in the undrained diced tomatoes, beef broth, rice, garlic salt, dried oregano, and pepper. Stir well.

Heat to a boil and then reduce to a simmer. Cover and continue simmering on low for 20-25 minutes or until the rice is cooked through.

Serve warm

How to serve stuffed pepper soup?

This is a nice filling soup so it is a meal on it’s own! However we like to pair it with a nice salad or simple bread or roll. I love to make air fryer garlic knots or these easy beer biscuits to serve with it. It is also super tasty topped with a little bit of shredded cheddar cheese or fresh grated parmesan. For a little extra heat sprinkle some red pepper flakes on the top and stir in.

How to store and reheat this soup?

This stores well in an airtight container in the refrigerator for 2-3 days. It can easily be reheated on the stovetop over low heat or in the microwave.

Can this be made in the slow cooker?

Yes it can! This cozy soup is the perfect thing to have cooking in the slow cooker on a cool night! Just place all of the ingredients (except for the rice) into the slow cooker, stir and cook for 6-8 hours. Cook the rice separately and add the cooked rice to the soup in the the last 20 minutes of cooking.

Can I make this low carb?

This delicious soup can be made low carb really easily! You can simply omit the rice and add in another can of diced tomatoes or more chopped bell peppers to add more substance to the soup. Alternately you can swap the white rice for cauliflower rice to have a similar texture without the carbs.
