Make sure you have time to marinade-
This bruschetta chicken bake is best if the chicken has time to really soak in the marinade. I like to make it ahead for busy weeknights so that I can just toss the ingredients together and get dinner on the table quickly. If you’re pressed for time you can marinade for a couple of hours and it will still be delicious.
What to serve with bruschetta chicken-
This chicken dinner is easy to complete with your favorite side dish! It is great with a simple side salad, steamed veggies or even zucchini noodles! I also love to serve it with pasta and garlic bread for a delicious Italian themed meal! Variations-
If you don’t have grape tomatoes you can easily swap them out for cherry tomatoes or diced roma tomatoes any fresh juicy tomatoes will work perfectly. You can also change up the flavor with a different kind of cheese. I like to add some fresh grated parmesan cheese or use fresh grated provolone to add a smoky flavor. You can also make this with boneless skinless chicken thighs instead of chicken breasts.

This easy bruschetta chicken recipe is delicious any time of year but it is great made in the summer with farm fresh ingredients. This is a great recipe to make on the grill in the summer months! For grilled Bruschetta chicken You’ll want to marinade the chicken the same way and then place it on a preheated grill and grill over medium heat for about 5-6 minutes on each side. Then top the chicken the cheese and fresh tomato bruschetta and close the grill lid for 2-3 minutes to let the cheese melt. I find when cooking on the grill it is easier to top each piece of chicken with a slice of mozzarella cheese instead of shredded cheese.
Can I make this ahead of time?
Yes! This delicious chicken bruschetta recipe can be prepped ahead for a quick and easy dinner recipe. I like to trim my chicken and place it in a freezer bag. Then I mix up the marinade and pour it in with the chicken. Then I pop it in the freezer until I’m ready to make it. Take it out of the freezer and place it in the refrigerator 24 hours before you want to cook it, that way it marinates and thaws at the same time. You can make the bruschetta up to 24 hours ahead of time or wait and make fresh bruschetta while your chicken cooks.
Ingredients for this Easy Chicken Bruschetta –
2-3 Lbs Boneless Skinless Chicken Breasts
For the Marinade-
4 Tbsp Olive Oil
2 Tbsp Lemon Juice
1 tsp Italian Seasoning
2 Tbsp Balsamic Vinegar
2 Cloves Garlic (minced)
For the Bruschetta Topping-
1 ½ Cup Grape Tomatoes- chopped
½ Red Onion Diced
1 tsp Balsamic Vinegar
1 tsp Olive Oil
½ Cup Chopped Fresh Basil
1 tsp Garlic Powder
½ tsp Salt
1 Cup Shredded Mozzarella
Here’s how to make this Easy Bruschetta Chicken Recipe-
In a large bowl whisk together marinade ingredients
Butterfly chicken or pound flat and place chicken in a shallow dish or zip top bag.
Pour the marinade over the chicken and allow to marinade for at least two hours or overnight.
When ready to cook-
Preheat the oven to 425.
Heat a little bit of olive oil in a large skillet over medium-high heat. Sear the chicken for a couple of minutes on both sides. You don’t need to cook the chicken through just get a nice golden brown sear on the outside.
Place seared chicken in a baking pan or casserole dish.
Place in the oven and bake for 25-30 min or until the chicken reaches an internal temperature of 165 when tested with a meat thermometer.
While the chicken is baking prepare the bruschetta topping. Place the diced red onion, chopped grape tomatoes and chopped basil in a medium bowl.
In a medium bowl whisk together balsamic vinegar, olive oil, garlic powder and salt. Pour over the tomato mixture.
Toss to coat the bruschetta mix evenly.
Remove the chicken from the oven and top each chicken breast with the bruschetta mixture and the mozzarella cheese.
Place back in the oven and bake for about 5 min or until the cheese is melted, serve immediately
