One of my favorite things about the fall season is all of the irresistible apple treats! Whether it is a classic apple crisp, apple muffins, or apple dumplings, sweet and tart apples add an amazing layer of flavor to so many desserts!

These easy apple pie cookie cups are one of my absolute favorite fall desserts because they are full of flavor but super simple to make! They are like mini apple pies and are great topped with fresh whipped cream, vanilla ice cream, caramel sauce or eating just the way they are!

They are a fun twist on such a classic dessert and the individual portions are great for parties, holiday gatherings, lunch box treats or bake sales! You cant go wrong with these adorable cookie cups for any occasion!

Ingredients

  • Sugar Cookie Dough
  • For the Filling-
  • 5 Granny Smith Apples
  • ¼ Cup White Sugar
  • ¼ Cup Brown Sugar
  • 1 tsp Ground Cinnamon
  • ¼ tsp Ground Nutmeg
  • 1 Tbsp Corn Starch
  • 2 Tbsp Butter
  • ½ Cup Water

Instructions

  • First you’ll want to peel and dice your apples into small pieces and place them in a large mixing bowl. I like to use an apple peeler corer slicer to get nice uniform pieces. But dicing them by hand works well too.
  • Add cinnamon, nutmeg, corn starch, brown sugar and white sugar to the large bowl and stir or toss to coat the apples evenly.
  • In a skillet over medium heat melt the butter.
  • Add the apple mixture to the skillet and cook for 2-3 minutes until the juice of the apples begins to cook out.
  • Add in water and continue to cook, stirring frequently, for about 10 minutes over medium-high heat until the apples begin to caramelize and the liquid begins to thicken, then turn the heat down and continue to cook until the mixture is a deep golden brown.
  • Remove from heat and set aside while you make the cookie cups.
  • To make the cookie cups
  • First preheat the oven to 350.
  • Spray a muffin tin with cooking spray or grease it with butter.
  • Scoop dough into the bottom of the muffin cups in about 1 ½ tablespoon size scoops. Press the dough in the bottom of the muffin cup and up the sides about ¾ of the way to the top creating a little cup. The dough will appear to be pretty thin but will thicken when it bakes.
  • Place the muffin pan in the oven for about 12 minutes or until the edges are a light golden brown. The center of the cookie cups will puff up but as they cool it will sink back down.
  • Remove from the oven and allow to cool in the pan for about 10 minutes.
  • Using the tip of a sharp knife gently loosen the edges of cookies and remove from the pan to cool completely.
  • Scoop the apple mixture into the center of each cookie cup and fill.
  • Store leftovers in an airtight container in the refrigerator.

FAQ & TIPS

What apples work best?

For this recipe I like to use granny smith apples because they are a classic for baking. However you can use your favorite apple in this recipe. You want to choose firm apples that aren’t too sweet. Honeycrisp, pink lady or fuji apples work well for this recipe!

Can I use homemade sugar cookie dough?

Yes! These apple pie sugar cookie cups can be made with pretty much any sugar cookie dough. You can use the refrigerated kind, sugar cookie dough mix or your favorite from scratch recipe. I recommend baking one cookie cup as a test to see how long your dough will need to bake. You want the edges of the cookies to be a light golden brown, but not overbaked! Your bake time may vary depending on your cookie dough.

What to do with extra dough?

If you have extra sugar cookie dough after making these there are a few things you can do with it. Obviously you can make it into sugar cookies and enjoy them but you can also use the leftover scraps to decorate the top of your apple pie cups. You can roll it out and cut it into small shapes of your choice and place them on top of the apple filling once your cookie cups are filled! You can even sprinkle them with a little cinnamon sugar!

Here’s how to make these Apple Pie Sugar Cookie Cups
