Air Fryer Twice Baked Potatoes

If you love crispy potato skins and creamy, cheesy centers, these Air Fryer Twice Baked Potatoes are about to become your new favorite side dish! They’re the perfect blend of fluffy baked potatoes, melty cheese, crispy bacon, and tangy sour cream—all made easy in the air fryer.

Twice baked potatoes have always been a favorite in my house. My son has asked for them for his birthday dinner, and they are something I love to make for guests. They are perfect as an appetizer or alongside a steak as a hearty side dish!

Ingredients

  • 3 Baking Potatoes Baked or Raw
  • 1 Cup Grated Cheddar
  • 4 Tbsp Cooked Bacon Pieces
  • 2 Tbsp Chopped Green Onions
  • 3 Tbsp Cream Cheese
  • 2 Tbsp Sour Cream
  • 1/2 tsp Salt
  • 1/2 tsp Pepper

Instructions

  • Start by washing and baking your potatoes ahead of time. You can bake them in the oven or use the air fryer for a quicker option. For air frying, pop the washed potatoes (skin on) into the basket and cook at 360°F for about 45 minutes, flipping them halfway through. They’re done when a knife or toothpick slides in easily. Allow baked potatoes to cool.

  • Next cut the potatoes in half lengthwise.
  • Using a large spoon scoop out the potatoes insides into a large mixing bowl, leaving a thin layer of potato around the edges of the potato skin.
  • Add the sour cream, cream cheese, salt, pepper and half of the shredded cheddar into the bowl with the potatoes. Using a potato masher or large spoon, mash the potatoes and stir the filling until everything is incorporated.
    1 Cup Grated Cheddar, 3 Tbsp Cream Cheese, 2 Tbsp Sour Cream
  • Taste and add additional salt and pepper if desired.
    1/2 tsp Salt, 1/2 tsp Pepper
  • Spoon the mashed potato filling back into the potato skins and arrange them in your air fryer basket.
  • Air fry them for 8 minutes.
  • After 8 minutes sprinkle the remaining shredded cheese and bacon pieces over the top of the potatoes.
    4 Tbsp Cooked Bacon Pieces, 1 Cup Grated Cheddar
  • Air fry for another 2-3 minutes or until the cheese is melted and golden.
  • Top with chopped green onions and serve

Ingredients for Air Fryer Twice Baked Potatoes

Baked Potatoes – I like to use restaurant style russet potatoes for this recipe but you can use your favorite type of potatoes. You can bake the potatoes however you’d like. They can be baked in the air fryer (the instructions are in the recipe card) , the oven or even the microwave. I like to season the outside of the potatoes with salt, pepper and garlic before baking.

Grated Cheddar Cheese – Fresh grated cheese melts best but you can use pre-shredded cheese for a quick option. I like to use cheddar but you can use your favorite cheese. Pepper jack or Monterey jack make a great option.

Bacon – Bacon bits add delicious flavor to these potatoes. I like to cook bacon fresh and then chop it up. You can also use pre-cooked bacon for a quick option. I don’t like to use premade bacon bits because they are really small but if you like them you can definitely use them!

Cream Cheese – Cream cheese adds an amazing creaminess for these potatoes. You’ll want your cream cheese to be softened to room temperature so that it is easy to mix in. You can use plain cream cheese or a garlic and herbs flavored cream cheese for extra flavor.

Sour Cream – Sour cream makes the inside of these twice baked potatoes creamy and delicious. As an alternative you can use plain Greek yogurt.

Green Onions – We love the mild flavor of green onions in these potatoes, they add a great flavor. For a more mild onion flavor you can use fresh chives. If you don’t like the onion flavor you can skip them.

Salt & Pepper – Salt and pepper are a must for any time you’re cooking potatoes! It is always a great idea to taste as you go and adjust the seasoning accordingly.

FAQ & Tips for These Twice Baked Potatoes

Can I make these ahead of time?

Absolutely! These are perfect for making and popping in the air fryer when you are ready to eat! They are great for meal prepping to have on hand and you can even freeze them. To make them ahead just stuff the potato skins with the filling and wrap them in plastic wrap or put them in an airtight container. When you’re ready to cook just follow the directions but add 1-2 minutes to the first cook time, them then place on the toppings and air fry again.

How to serve these twice baked potatoes-

These make a delicious side dish, appetizer or even main course. They are great as is or loaded up with additional toppings like sour cream, extra cheese and bacon. You can also give them a twist by loading them with seasoned ground beef, cheese and salsa for some Mexican flavor!
