Granola is a quick and easy treat that goes great with yogurt, oatmeal, fruit, or all by itself! This easy honey pecan skillet granola comes together in minutes and is delicious!
I’ve said it here before time and time again. Feeding boys is a full time job. Mine right now are at particularly hungry ages. 21, 16 and 11… the teenage hunger starts in the tween years and apparently sticks on into the early twenties.
My two older boys, the ones who eat the most, are also super health conscious. They go to the gym almost every day, and they really watch what they eat. My 11 year old will happily park himself on the couch with a bag of cheese puffs and a Capri-Sun and munch away… but then again he doesn’t care about girls yet.
One of the things that my boys love is granola. They love it with some Greek yogurt and fruit… in a giant bowl… giant.
Because they can polish off a bag in a day or so I decided it was high time to start making my own.
I started looking for recipes and realized what a huge variety of granola there is out there in the world, I mean the combinations are really endless. I’ve tried several but I really love making this honey pecan skillet granola.
What is skillet granola?
Well traditional granola gets mixed together, baked in the oven and then cooled. With skillet granola you cook it on the stove top.
There really isn’t a huge difference in how much time it takes but skillet granola results in a slightly chewier, soft consistency instead of a crunchier traditional granola.
With skillet granola your nuts get nice and coated too which I love and the resulting little sticky clusters of granola are delish! You also only have one dirty pan with skillet granola, no bowls required you can just pop everything into the pan and get cooking!
Here’s what you’ll need for your honey pecan skillet granola
3- Tbsp. Coconut Oil
5- Tbsp Honey
1/4 – Cup Chopped Pecans
1- tsp. Cinnamon
1/2- tsp. Salt
1/2- Cup Coconut
2- Old Fashioned Rolled Oats
In a large skillet melt your coconut oil. Add in your honey, pecans, cinnamon and salt. Heat over low/medium heat for 2 minutes until just a little bubbly.
Now add in your oats and coconut and continue heating for 5-10 minutes stirring frequently until golden brown. You want your oats to get nice and toasted. A taste test is a great way to check if it’s ready, if the oats still taste raw then cook a little longer!
Now spread it evenly on a cookie sheet lined with parchment paper. Let it cool completely.
It’s super tasty by itself, over yogurt, over fruit… however you love your granola!
While I can’t guarantee that this will keep the hungry boys in your life full I will put money on the fact that it will be a hit! If it doesn’t get eaten all in one day it keeps well in an airtight container for about a week.
Honey Pecan Skillet Granola
This granola is delicious, chewy, crunchy, and perfect for topping fruit, yogurt or by itself!
Ingredients

This is very interesting. I have made a very similar granola several times but it takes quite a bit of time in the oven. I have never heard of a skillet granola. I will be very anxious to try this and see which is better. ๐ Thank you!
