Quinoa Oatmeal Granola Bars

If you’re looking for a great snack that is a little chewy, a little crunchy and a little sweet these quinoa oatmeal granola bars are perfect! 
If you're looking for a healthy granola bar recipe look no furthur! These are full of healthy ingredients and the perfect blend of chewy and crunchy!

This weekend we opened up our cabin, the weather was perfect, the lake was beautiful… it was fantastic.

I try to plan our food for our lake weekends and load up on easy to grab and eat meals and treats for my hungry boys who come and go quickly all day long.  I made up a batch of these granola bars and took up with us. They’re a perfect snack… or breakfast… whenever they need to fill their staaarrrvvinng bellies.

So I decided to go ahead and update them here. I made my latest batch with sucanat instead of brown sugar and was super pleased with the results!

If you’ve read my blog for awhile, you know I have a thing for quinoa.

While this tasty grain is great served as a side dish, it is also great to add in to other things to boost their fiber, protein and overall nutrition.

My kids love granola bars so combining healthy quinoa with the grab and go kid friendly granola bar, is a win win!

 These quinoa oatmeal granola bars are perfect! A great combination of chewy, crunchy and just the right amount of sweet full of healthy quinoa!
These are a little chewy, a little crunchy, and just the right amount of sweet.

Here’s what you’ll need for these Quinoa Oatmeal Granola Bars

1- Cup Uncooked Quinoa
1-Cup Old Fashioned Uncooked Oats
1/2- Cup Coconut (If  you really want the coconut flavor to shine through up this to 3/4)
3/4- Cup Chopped Pecans
1/2- tsp Salt
1/2 – Cup Peanut Butter
3/4- Cup Honey
1/4- Cup Brown Sugar or Sucanat
1/2 Cup mini Chocolate Chips

Spread the oats and quinoa out on a baking sheet and toast in the oven at 350 for 8-10 minutes.

Combine PB, Honey, Brown Sugar, and salt in a sauce pan over medium heat. Heat until boiling and remove from heat.

Combine all the dry ingredients, except chocolate chips, in a bowl and pour PB mixture over. Stir until everything is well mixed.

Press firmly into a greased 9×13 inch baking pan, Bake for 20 minutes at 350.

Remove from oven and immediately sprinkle chocolate chips evenly across the top. Let them melt for about 3-4 minutes and then spread over the granola bars.

Let cool completely, cut into bars ( I cut them into 16 bars but you can make them any size you’d like).

Keep your quinoa oatmeal granola bars in an air tight container or wrap them individually for a grab and go snack!

    Ohhh, looks yummy:) I’ve tried some granola bars and my kids aren’t fans yet:/ I’d love to use this with one tweak… substituting sunflower butter instead of peanut:)

    My Mom is allergic to peanuts too, I wondered what I could substitute. I have never heard of sunflower butter?? I did see cashew and almond the other day though. Are they all about the same to cook with?

    It depends on your quinoa. I usually buy the bob’s red mill kind which is pre-rinsed. But if you buy another brand or get it in bulk I would.
