Delicious Sweet Potato Salad

I love sweet potatoes! As a kid I only associated them with Thanksgiving, smushed up and topped with marshmallows. Now I’m not saying I don’t still love them like that but as an adult I’ve realized they are delicious in so many other ways! Like, if I’m at a restaurant and there is an option for sweet potato fries, I do a little bit of a happy dance!

So I decided to try and create a potato salad made with sweet potatoes! We do a ton of outdoor eating and entertaining throughout the summer so I make a lot of potato and pasta salads. I will definitely be adding this sweet potato salad into the rotation because it was a huge hit!

Here’s what you’ll need for this sweet potato salad  –

6-8 – Medium size sweet potatoes (about 3lbs)

4- Green Onions

3/4- Cup Mayonnaise

3/4- Cup Sour Cream

2- tsp Dried Dill

1- Tbsp Balsamic Vinegar

1-Red Bell Pepper

Salt to taste

The first thing you need to do is get your sweet potatoes chopped and cooked. You’ll want to get a big pot of water boiling with just a pinch of salt. Peel and chop your sweet potatoes into bite-size pieces then place them in the boiling water.

Let them boil uncovered for 10-15 minutes, test them for softness at about 10 minutes. You want them to be fork tender but not mushy. Once they’re cooked drain them and run cold water over them.

Now finely chop your red pepper and green onions and put them in a large bowl. Add in your mayo, sour cream dill, and balsamic vinegar stir everything together until thoroughly mixed.

Pour your sweet potatoes in the large bowl and stir to coat them with the sour cream mixture. Do a taste test and if it needs a little salt sprinkle some in!

You’ll want to let it chill about an hour before eating, let the flavors blend together. It keeps beautifully so you can make it ahead of your picnic or party and just pull it out of the fridge when you’re ready!

Ingredients

  • 6-8 – Medium size sweet potatoes about 3lbs
  • 4- Green Onions
  • 3/4- Cup Mayonnaise
  • 3/4- Cup Sour Cream

  • 1- Red Bell Pepper

Instructions

  • Peel and chop sweet potatoes into bite-size pieces.
  • Bring a large pan of water to a boil, add a pinch of salt and sweet potatoes. Boil about 10 minutes or until fork-tender.
  • Drain thoroughly and run cold water over them.
  • While your potatoes are cooking finely chop your red pepper and green onions.
  • In a large bowl combine mayo, sour cream, dill, and balsamic vinegar until well blended.
  • Add your peppers and onions to the mayo mixture and stir.
  • Fold in your cooked and cooled sweet potatoes and til covered with dressing mixture.
