Peel and chop sweet potatoes into bite-size pieces.
Bring a large pan of water to a boil, add a pinch of salt and sweet potatoes. Boil about 10 minutes or until fork-tender.
Drain thoroughly and run cold water over them.
While your potatoes are cooking finely chop your red pepper and green onions.
In a large bowl combine mayo, sour cream, dill, and balsamic vinegar until well blended.
Add your peppers and onions to the mayo mixture and stir.
Fold in your cooked and cooled sweet potatoes and til covered with dressing mixture.
