Sometimes I get on Pinterest and pin away recipes. Then when I want to make them I head to whatever blog or site has the directions and follow them.
Other times I kind of just see a picture on there, get a vague idea of how it might be put together, and then start concocting.
This recipe was one of those times. My friend Marsha makes some kick ass buffalo chicken dip, and Anthony came home from her house the other day talking about how good it is.
This started a hankerin’ for some buffalo chicken something… then I remembered I’d seen some kind of buffalo chicken tacos on Pinterest, I didn’t pin them, but they stuck in my brain, and I decided they couldn’t be too hard to figure out.
So I made these. Oh my yummy buffalo-y goodness. Total hit (sometimes my “don’t worry I saw this on Pinterest” doesn’t go so well)
If you are a lover of buffalo wings, even if you are not a lover of coleslaw (the teenager is not) you will like these… a lot!
Here’s what you’ll need
4- boneless skinless Chicken breasts. (you could use other chicken here, a picked part rotisserie would do just fine.
1/3- Cup Buffalo Wing sauce. <—- not just plain old hot sauce, you want the wing sauce. I used Sweet Baby Rays.
1/2 a bag of Shredded Coleslaw. Or if you’re ambitions make your own, I like the stuff in the bag!
1/4- 1/2- Cup of Blue Cheese Dressing (the amount here depends on your taste. I added it until the coleslaw was nice and covered)
1/4- Cup Crumbled Blue Cheese (more if you really like it)
2- Stalks of Celery finely diced
Salt & Pepper
Cooking oil of choice.
Start out by cutting your chicken breasts into nice bite size chunks. Season them up with some salt and pepper. Heat whatever oil you like (I used olive) in a skillet and add your chicken. Cook it over medium heat until it is cooked through and has little golden brown color to it.
While your chicken is cooking, throw your coleslaw mix, dressing, celery, and blue cheese, together in a big bowl and mix until everything is covered with dressing.
Once your chicken is done remove it from the heat and add your wing sauce.
Lay a tortilla flat and layer on the chicken and coleslaw. Fold it up and enjoy!!
