Delicious Strawberry Lemonade Shortcake

The sun is finally making it’s appearance here in Ohio and I couldn’t be happier! Last month our family voyaged to Florida for vacation and it gave us a little taste of summer and sunshine.

I feel like I’m one of the only people who had never been to Florida before, but I can totally see why people love it!

In addition to soaking up some sunshine, we also we also treated to my step-Mom’s amazing cooking skills and all the treats that Universal Studios has to offer… it was serious deliciousness overload!

We came home to gloom and rain… it took some adjustment! But over the last couple days the sun has decided to appear and let us know that spring is in full bloom!!

I decided I needed to make a post-vacation dessert that is packed with sunshine and deliciousness, and to me nothing says summer like lemonade! So this strawberry lemonade shortcake was born, and boy is it good!

For this recipe I decided to make homemade shortcakes, these are seriously so much better than the spongy store bought ones, and topped with a tangy creamy lemonade filling, plus fresh strawberries this was a huge hit with my boys!

Here’s what you’ll need for this Strawberry Lemonade Shortcake!

For the shortcake-

1 1/2- Cup Flour

1/4- Cup Sugar

1 -tsp Baking Powder

1/4 -tsp Baking Soda

1/4 -tsp Salt

1/3- Cup Butter- (cold cut into cubes)

1- Egg

1/2- Cup Sour Cream

2 -Tbsp Milk

For the Lemonade Filling-

8 oz. Cream Cheese (softened)

1/4- Cup Lemonade concentrate (thawed)

1/3- Cup Whipping Cream

1/2- Cup Powdered Sugar

(optional- yellow food coloring)

For the Strawberries-

2- Cups Chopped Fresh Strawberries

1-2 – tsp Sugar

The first thing you’ll want to do is get your oven preheating to 400 degrees.

In a large bowl combine your flour, sugar, baking powder, baking soda, and salt.  Now you’ll want to cut in your butter using a pastry mixer.

Once you’ve got the butter blended in make a well in the middle of your dry ingredients.

In a smaller bowl mix together your egg, sour cream, and milk, then pour that mixture into your dry ingredients.

Now gradually incorporate your wet ingredients until everything is well mixed. Divide the dough into 8 equal size pieces. If your dough is a little sticky flour your hands and pat your dough into flat circles and place them onto a baking sheet.

Pop  your baking sheet into the oven for 18-20 minutes or until your shortcakes are a light golden brown.

While your shortcakes are in the oven you can whip up your lemonade filling and strawberry topping.

For the strawberries combine them in a small bowl and sprinkle the sugar over the top. You can use one or two teaspoons, depending on how sweet your want them. Give them a quick stir and set them aside.

To make the lemonade filling you want to put your cream cheese in the bowl of a mixer and mix until light and fluffy. Add in your lemonade concentrate, and continue mixing. Make sure to scrape the bowl as you go! Now add in your whipping cream, once it’s thoroughly mixed add in your powdered sugar and keep mixing. If you want some extra lemony color add in a few drops of yellow food coloring.

Once all your components are finished it’s time to create your shortcakes! You can make single layer ones by topping them with the lemonade mixture and then a spoonful of the strawberries. If you want a double decker strawberry lemonade shortcake start with one shortcake, top it with the lemonade mixture, a spoonful of strawberries, then add on another shortcake and another layer of toppings!!
