Mini Pepper Pizzas

These little pepper pizzas are the perfect bite size snack or appetizer! They are full of flavor, easy to make and they are low carb! Ready in only 20 minutes, you’ll love these cheesy, crunchy, flavorful mini pizzas!

Ingredients

  • 5-10 Mini Sweet Peppers
  • ½ Cup Marinara Sauce
  • ½ Cup Shredded Mozzarella
  • ¼ Cup Shredded Parmesan
  • ¼ Cup Mini Pepperoni

Instructions

  • Preheat oven to 350 and line a baking sheet with parchment paper.
  • Cut the peppers in half lengthwise. Remove the seeds and white membrane to clean the peppers out.
    5-10 Mini Sweet Peppers
  • Place peppers on the prepared baking sheet.
  • Spoon enough sauce into each pepper half to cover the bottom.
    ½ Cup Marinara Sauce
  • Stuff each pepper with shredded mozzarella cheese and sprinkle with shredded parmesan.
    ½ Cup Shredded Mozzarella, ¼ Cup Shredded Parmesan
  • Place pepperoni on top of the cheese.
    ¼ Cup Mini Pepperoni
  • Bake for 10 minutes or until the cheese is melted completely.
  • Serve warm
