Air Fryer Chicken Taquitos

These air fryer chicken taquitos are full of cheesy chicken filling wrapped in a crispy tortilla shell. They are super easy to make in the air fryer and make a great lunch, snack or quick dinner!

Ingredients

  • 2 Cups Cooked Chicken- finely chopped or shredded
  • 1/2 Cup Salsa
  • 1 Cup Shredded Cheddar Cheese
  • 2 oz Cream Cheese softened
  • 12 Corn Tortillas
  • 1 Tbsp Olive Oil
  • Salt

Instructions

  • In a large mixing bowl mix together the shredded chicken, salsa, shredded cheese and softened cream cheese. Mix until well blended.
  • Place 2-3 tortillas on a microwave safe plate covered with a damp paper towel and heat tortillas for about 30 seconds this helps make the tortillas pliable and easy to work with.
  • Scoop chicken mixture into the center of each tortilla and wrap the sides of the tortilla tightly around the filling. Repeat with the other heated tortillas.
  • Continue heating remaining tortillas a few at a time and filling them until all of the tortillas are formed into taquitos.
  • Place the rolled taquitos into the air fryer basket seam side down. Make sure to leave enough room between the taquitos for the hot air to circulate and cook the taquitos. You may have to work in batches.
  • Brush the taquitos lightly with olive oil and sprinkle with salt.
  • Set the air fryer to 400 degrees and air fry the taquitos for 6-9 minutes or until golden brown and crispy.
  • Serve warm.
