- 3-4 Medium size cucumbers
- 2- Avocados ripe but still firm.
- 1/4- Cup Mayonaise
- 2- Green Onions thinly sliced
- 1- tsp Lime juice
- 1/2- tsp Garlic Powder
- 1/2- tsp Smoked Paprika
- Salt to taste
1.Chop your cucumbers and avocados into bite sized pieces. (peeling your cucumbers is optional, I like to leave the skin on, but you can peel them if you’d like.)
2.Toss them together in a large bowl along with the green onions
3.In a smaller bowl mix together your mayonaise and lime juice, garlic powder, and smoked paprika.
4.Now pour the mayo mixture over the cucumbers and avocados and gently mix, salt to taste.
5.Serve immediately and enjoy!
