Ingredients

  • 3-4 Medium size cucumbers
  • 2- Avocados ripe but still firm.
  • 1/4- Cup Mayonaise
  • 2- Green Onions thinly sliced
  • 1- tsp Lime juice
  • 1/2- tsp Garlic Powder
  • 1/2- tsp Smoked Paprika
  • Salt to taste

Instructions

  • 1.Chop your cucumbers and avocados into bite sized pieces. (peeling your cucumbers is optional, I like to leave the skin on, but you can peel them if you’d like.)
  • 2.Toss them together in a large bowl along with the green onions
  • 3.In a smaller bowl mix together your mayonaise and lime juice, garlic powder, and smoked paprika.
  • 4.Now pour the mayo mixture over the cucumbers and avocados and gently mix, salt to taste.
  • 5.Serve immediately and enjoy!
