Ingredients

  • 2 ½ Cups All Purpose Flour
  • 1 Tbsp Baking Powder
  • ½ tsp Salt
  • 1 ½ Cups Sugar
  • 2 Large Eggs
  • 1/3 Cup Butter softened to room temperature
  • 2 tsp Vanilla Extract
  • ½ tsp Peppermint Extract
  • Leaf Green Gel Food Coloring
  • 1/2 Cup Sugar for rolling
  • Large Heart Shaped Sprinkles

Instructions

  • Preheat oven to 375 and line a baking sheet with parchment paper.
  • In a medium size bowl mix together flour, salt, and baking powder.
  • In a large mixing bowl with an electric hand mixer or in the bowl of a stand mixer fitted with a paddle attachment cream together butter and 1 1/2 cups sugar.
  • Add in the vanilla and peppermint extracts and then eggs one at a time mixing after each addition.
  • Gradually add in the dry ingredients mixing after each addition until they are all incorporated.
  • Add a few drops of green food coloring and knead the dough until the color is evenly distributed.
  • Place sugar in a bowl on shallow dish.
  • Scoop out the cookie dough in tablespoon size scoops, roll into a ball and then roll in the sugar to coat.
  • Place on prepared cookie sheet and flatten slightly.
  • Press a heart shaped sprinkle into the center of each dough ball.
  • Bake for 8-10 minutes or until set. The bottom of the cookies should be very slightly golden brown. Allow to cool on the baking sheet for 2-3 minutes before moving to a wire cooling rack to cool completely.
  • Store in an airtight container.
