Cranberry Apple Coleslaw

Ingredients

  • 1 Bag Coleslaw Mix
  • 2 Medium Size Apples
  • 1/2 Cup Dried Cranberries
  • 1/2 Cup Shredded Carrots
  • 1/3 Cup Sliced Almonds
  • For the dressing
  • 1/2 Cup Mayonnaise
  • 1/3 Cup Sour Cream
  • 2 Tbsp Apple Cider Vinegar
  • 3 Tbsp Honey

Instructions

  • First we're going to make the dressing. In a small bowl combine mayonnaise and sour cream, stir to mix well. Add in the apple cider vinegar and honey, continue mixing until everything is well incorporated.
  • Next it is time to cut the apples. Quarter the apples and remove the core. Slice the quarters in thin slices and then cut them in half.
  • Place coleslaw mix, shredded carrots, chopped apples, almonds and cranberries in a large bowl. Toss to to mix well.
  • Pour the coleslaw dressing over the coleslaw mixture and stir until all of the veggies are evenly coated with the dressing.
  • Serve immediately or cover and refrigerate.
