Candy Corn Cookie Bars

Ingredients

  • Cookies-
  • ½ Cup Butter- softened
  • 1 Cup Sugar
  • 1 Egg
  • 2 tsp Vanilla
  • 2 Cups Flour
  • 1 tsp Baking Powder
  • ½ tsp Salt
  • Yellow Gel Food Coloring
  • Orange Gel Food Coloring
  • Frosting-
  • ½ Cup Butter- softened
  • ½ tsp Vanilla
  • 3 Tbsp Heavy Cream
  • ½ tsp Salt
  • 2 ½ Cups Powdered Sugar
  • Decoration
  • ½ Cup Candy Corn
  • Yellow & Orange Sprinkles

Instructions

  • First preheat your oven to 350 and line a square 8×8 baking pan with parchment and lightly butter.
  • In the bowl of a stand mixer fitted with the paddle attachment or in a large bowl with an electric mixer, cream together butter and sugar until light and fluffy.
  • Add in the egg and vanilla extract, continue mixing until well incorporated.
  • In a separate bowl combine flour, baking powder and salt, whisk to combine well.
  • Gradually add the dry ingredients into the wet ingredients mixing between each addition until all the flour mixture is well incorporated.
  • Next divide the dough in half and place on a clean work surface or piece of parchment paper.
  • Add yellow food coloring to one half of the dough and knead until the color is even throughout.
  • Repeat with the other half of the dough and orange food coloring. I used about 1/4 tsp of gel food coloring for each color.
  • Press the yellow dough into the bottom of your prepared pan.
  • Place the orange dough on a piece of parchment or wax paper and roll or press it out into an 8×8 square. Carefully place it on top of the yellow dough in the pan and gently press it into place getting it as close to the edges as possible.
  • Bake for 18-22 minutes or until just set. Don’t overbake or the cookies will be dry.
  • Place on a cooling rack to cool completely before frosting.
  • To make the frosting-
  • Place softened butter in a large mixing bowl and cream with an electric mixer.
  • Add in vanilla and continue beating until well incorporated.
  • Add in cream and half of the powdered sugar and mix until smooth. Add remaining powdered sugar and salt. Mix until all ingredients are well incorporated and frosting is smooth.
  • Spread frosting evenly across cooled cookie bars.
  • Decorate with candy corn and orange and yellow sprinkles.
  • Cut into 9 squares and serve!
