These baked pancake squares make breakfast a breeze! Bake them up on the weekend and have breakfast taken care of for the whole week!
My boys love a hot breakfast. Especially my little man Daniel, he says it’s “real” breakfast… because you know, cereal, muffins… they’re fake breakfast. I love anything that I can make ahead of time and serve all week, if it’s easy and hassle free… even better!
So these pancake squares?? Such a great idea. I’ll admit I’ve seen recipes for pancake squares floating around Pinterest and thought, “why make them when I can just make a batch of pancakes and freeze them?”
The answer my friends, maybe it’s obvious to you, they’re so much easier.
Regular pancakes? You mix, you pour, you flip… you screw up the first couple, you get in the groove, pour, flip, pour, flip, and then you’ve got a nice big pile of pancakes. You also have a mixing bowl, a spoon, a pan, a spatula, a counter and stove covered with batter drips… that last part may just be me though.
These, well you mix up the batter, pour it in a baking pan, pop it in the oven… that’s it! No babysitting a pan, no drips on the counter, just a bowl and a baking pan.
And they taste just like regular pancakes! I’m officially a convert!
Here’s what you’ll need-
1- Tbsp Sugar or Honey
1- Cup Flour
1 1/2 – tsp Baking Powder
1/4- tsp Salt
2- Tbsp Butter – melted
3/4- Cup Milk
1- tsp Vanilla
Now, like I promised these are super easy!
First get your oven pre heating to 350, grease a 8×8 or 9×9 inch pan.
Now in a large bowl combine your butter, milk, egg, and vanilla, add in your sugar, baking powder, salt and flour. Mix until everything is well incorporated and smooth.
Pour your batter into your prepared pan and pop it in the oven. Let it bake for 30-40 minutes or until the top is a light golden brown.
You can serve right away while they’re still warm or you can just cut out a square as you want them and eat them up!
We like ours with butter and syrup, but if you’re grabbing one on the way out the door a little jam is delicious too!
