Ingredients

  • 1 lb Macaroni Noodles
  • 1 med Red Onions diced
  • 3 Hard Boiled Eggs chopped
  • 2 Cups Mayonnaise
  • 1/4 Cup Milk
  • 2 Tbsp Apple Cider Vinegar
  • Salt and pepper to taste
  • 2 tsp Sugar
  • 1/2 Red Bell Pepper diced
  • 1/2 Green Bell Pepper diced
  • 1 Large Carrot peeled & grated

Instructions

  • Bring a large pot of water to a boil and cook the macaroni according to package instructions to al dente. Drain and rinse under cold water.
  • Place the cooked pasta in a large mixing bowl.
  • Add in the diced onion, and diced peppers.
  • Add in the grated carrots and diced or grated hard boiled eggs.
  • In a medium bowl whisk together the mayonnaise, milk, sugar, and apple cider vinegar until well mixed.
  • Gently fold in mayonnaise to the salad mixture and mix until everything is well combined.
  • Cover and refrigerate for at least an hour before serving for the flavors to blend together.
  • Serve chilled and enjoy
