  • 1/4 Cup Water
  • 2 Tbsp Black Beans minced
  • 3 cloves Garlic minced
  • 1 Green Bell Pepper seeded and sliced
  • 1 Red Bell Pepper seeded and sliced
  • 1 Onion sliced
  • 2 Tbsp Cooking Oil
  • 2 Tbsp Soy Sauce
  • 1 Tbsp Oyster Sauce
  • 1 tsp Sugar optional
  • 1/2 Cup Beef Broth
  • 1 tsp Cornstarch
  • Green onions chopped, for garnish

Instructions

To Velvet the Beef

  • Slice the flank steak thinly against the grain.
    1 pound Flank Steak
  • Place the beef slices in a medium size bowl and sprinkle with the baking soda and pour over the water.
1 Tbsp Baking Soda, 1/4 Cup Water
  • Gently massage the baking soda into the beef until it is all evenly coated.
  • Cover and refrigerate for 1-2 hours.
  • When you are ready to cook remove the beef from the fridge and rinse the beef thoroughly under running water to clean off all of the baking soda.

To Make the Beef in Black Bean Sauce

  • In a small bowl, combine the minced black beans, minced garlic, soy sauce, oyster sauce, and sugar. Mix well and set aside.
2 Tbsp Black Beans, 3 cloves Garlic, 2 Tbsp Soy Sauce, 1 Tbsp Oyster Sauce, 1 tsp Sugar
  • In a wok or large skillet heat 1 tablespoon of cooking oil over high heat.
    2 Tbsp Cooking Oil
  • Add in the sliced beef and cook, stirring frequently for 2-3 minutes or until the meat is no longer pink. Remove the beef from the frying pan and set it aside.
    1 pound Flank Steak
  • In the same skillet or wok add in another tablespoon of cooking oil and heat over medium-high heat. Add in the sliced green peppers, red peppers and onions. Cook stirring frequently for 5-10 minutes until the vegetables are tender but still a little crisp.
1 Green Bell Pepper, 1 Red Bell Pepper, 2 Tbsp Cooking Oil, 1 Onion
  • Return the beef back to the pan and stir it evenly into the vegetables.
  • Add the black bean sauce mixture to the beef and vegetables and stir to coat.
  • In a medium bowl whisk together the cornstarch and beef broth to create a slurry to thicken the sauce. Pour the mixture over the beef and vegetables
1/2 Cup Beef Broth, 1 tsp Cornstarch
  • Heat everything together over medium high heat and bring to a simmer. The sauce will continue to thicken as it simmers so continue to cook until the sauce reaches your desired consistency.
  • Serve over rice if desired and top with fresh chopped green onions.
