Trim the chicken breasts and cut them into small cubes about one inch across.
Preheat your oven to 400.
In a small bowl combine panko crumbs and olive oil, stir to coat the crumbs. Sprinkle in 1/2 teaspoon of salt.
Spread the bread crumbs in an even layer across a sheet pan and place in the oven for 2-3 minutes, stir the bread crumbs and continue toasting for another 3-4 minutes or until golden brown.
Place flour, onion powder, garlic powder, smoked paprika and the remaining 1/2 tsp salt in a shallow dish and stir to combine.
Place egg in a shallow dish and whisk.
Place toasted panko crumbs in a shallow dish.
Using tongs or a fork dip the chicken pieces in the flour mixture to coat them.
Then coat them in the egg.
Finally roll them in the bread crumbs to coat.
Repeat with the remaining chicken pieces.
Place the coated chicken pieces in the bottom of the air fryer basket in a single layer.
Air fry popcorn chicken at 400 degrees for 5-7 minutes or until the chicken is cooked through to 165 degrees when measured with a meat thermometer.
Serve warm with your favorite dipping sauce!
