Easter Egg Rice Krispies Treats

Ingredients

  • 4 ½ Tbsp. Butter + 1-2 Additional Tbsp.
  • 7 ½ Cups Mini Marshmallows about 1 ½ bags
  • 6 Cups Rice Krispies Cereal
  • 1-2 Cups White Candy Melts
  • Easter Sprinkles
  • 3 Colors Food Coloring

Instructions

  • *Note these directions are for creating 3 different colors of eggs, so the ingredients will be divided into thirds. If you are creating more or less colors you can divide the ingredients accordingly.
  • Place 1 ½ Tbsp butter and 2 ½ Cups marshmallows in a medium saucepan over medium-low heat, stirring frequently, until melted and smooth.
  • Add in a few drops of food coloring and stir until well incorporated, add more colors to reach desired color. Color will lighten when the cereal is added so make it a little brighter than you want your final product to be.
  • Remove the marshmallow mixture from the heat and add in cereal. Mix until the cereal is evenly coated.
  • Butter the palms of your hands and fingers and then scoop about 1/4 cup of the rice krispie mixture.
  • Press the mixture into egg shapes and place them on a piece of wax paper or parchment paper to cool. Continue until the entire mixture is shaped into eggs.
  • Repeat this process with the next two colors, working with one at a time.
  • Once all of your eggs are made and cooled it is time to dip them in chocolate.
  • Lay out parchment paper or wax paper to prepare your surface, place your sprinkles in a shallow dish.
  • Place the candy melts in a double boiler and heat over medium heat until melted and smooth. Or place them in a microwave safe bowl and heat in 30 second increments stirring in between until melted.
  • Dip each egg half way into the chocolate and then sprinkle on the sprinkles. Place on wax paper or parchment to cool.
  • Repeat with additional eggs until all of them have been dipped and covered with sprinkles. Allow to cool completely.
