Get your oven heating to 350 and grease an 8×8 baking dish or line with parchment paper.
Now we’re going to reduce the maple syrup a bit on the stove. In a small pan bring the syrup to a boil over med/high heat. Make sure you keep a close eye on it, once it gets boiling it likes to foam up and try to boil over, you can give it a stir or reduce the heat a little if it does. Keep it boiling for about 10 minutes or about 1/4 cup is evaporated. Once that’s done remove it from the heat to cool.
In a large mixing bowl using an electric mixer or stand mixer on low combine your butter, egg, vanilla extract and brown sugar. In a medium bowl combine baking powder and salt and flour. Alternate adding the flour mixture and maple syrup to the butter mixture and mixing well after each addition until it is all well blended.
Once everything is well combined pour it into your prepared pan.
Pop it in the oven for 30-35 minutes or until a toothpick comes out of the center clean. It should be a nice golden brown at this point.
Let them cool completely Cut into squares and enjoy!!
If you have any left (which you probably won’t!) store them in an airtight container.
