This vegetarian chicken Caesar pasta salad is perfect for a quick and easy dinner. Hearty enough for any meat eater but totally meatless!!
One of my hubby’s favorite things is Ceasar salad. He orders it every time we go to a restaurant for dinner and loves to have it at home.
Often, before we stopped eating meat, I would make a chicken Caesar salad for dinner. It was a great option for hot summer days, or for a quick meal when we were super busy.
Well, now that we’ve gone vegetarian over the last few years I’ve found ways to tweak our favorite dishes and make them meatless but still just as delicious!

I decided to take this salad to another level and add pasta! You get all the deliciousness of chicken Caesar salad plus pasta! Who doesn’t love that??
This vegetarian chicken Caesar salad is super simple too, and can be whipped up in no time! The only ingredient that may be hard to find is a vegetarian Caesar dressing. Since most Caesar dressing has anchovies the challenge is finding one that doesn’t have them. There are several options available, you can even order several on Amazon.
Here’s what you’ll need for this Vegetarian “Chicken” Caesar Pasta Salad-
4- Breaded Vegetarian Chicken Patties- I prefer the MorningStar Farms brand
16 oz. Rotini Pasta
1/2 Cup grated Parmasean
1 Cup Croutons lightly crushed
2-3 Cups Chopped Romaine Lettuce
1 Bottle Vegetarian Caesar Dressing
The first thing you’ll want to do is pop your patties in the oven and cook according to the package directions.
While your patties are cooking get your pasta water boiling and cook your pasta to al dente according to its directions.
Once your patties are done chop them into bite-size pieces and set aside to cool. Drain your pasta and rinse it with cold water to cool it off.
In a large bowl combine your lettuce, pasta, parmesan cheese, dressing, patties and croutons. Mix thoroughly to coat everything evenly.
Now your vegetarian chicken Caesar pasta salad is ready to serve! Get ready to have your family rave about the deliciousness!
