Tropical Shrimp Salad with Sweet Chili Dressing

Tropical Shrimp Salad

 

Every week I sit down and plan meals. I have a lot of go to recipes but every once in a while I like to create something new and different! This recipe all started with SeaPak® Jumbo Coconut Shrimp, I saw them while shopping at my local Walmart and was reminded of one of my favorite dishes at a local restaurant. The restaurant serves coconut shrimp with a delicious sweet and spicy sauce that compliments the shrimp beautifully.

I decided though instead of just a shrimp and sauce combo I would attempt to make these shrimp into a full meal by tossing together a salad bursting with flavor and texture perfect for a busy weeknight, and this tropical shrimp salad was born!  The beauty of this recipe is not only how delicious it is, but how super fast it comes together. You can just pop the shrimp in the oven and while they’re baking whip up the dressing and chop the veggies. You’ve got a delicious meal ready to go within half an hour! This salad was dubbed, “One of the best things you’ve ever created,” by the teenager… it’s pretty darn delicious!

Now I don’t know about you but after a busy day I love to cook an easy dinner and have a glass of wine! With a meal like this salad, nice and light, I love to have a glass of a crisp white wine! A perfect match for this meal is Black Box Pinot Grigio, it has a delicious light taste, and is not too sweet! If you’ve never tried Black Box you totally should! It is great for entertaining, or if you like an occasional glass and don’t want to worry about your wine going bad, it stays fresh for 6 weeks! Now for the Tropical Shrimp Salad recipe!

Here’s what you’ll need – this is enough to make about 3 dinner size tropical shrimp salads, you can of course add more of your favorite veggies or make smaller side salads!

For the salad

SeaPak® Jumbo Coconut Shrimp

Large bag- Mixed baby lettuce

2- Cups fresh Snow peas

1- large Mango

1- large ripe Avocado

1- large can Mandarin Oranges

1/4 Cup Slivered Almonds

 

For the Dressing –

1 Tbsp- Lime Juice

1- Tbsp Soy Sauce

2- Tbsp Olive Oil

1- Tbsp Agave (you can also use honey)

1- tsp Garlic Powder

1/4- 1/2- tsp Red Pepper flakes (you can add more or less depending on how hot you want it!)

First thing you want to do is preheat your oven and get your shrimp baking according to the package directions.

Once they’re in the oven you’ll want to combine all your dressing ingredients in a small bowl stirring well. Now set that aside for the flavors to blend together while you get everything else ready.

 

Now you’ll want to chop up your mango and avocado into bite size pieces. Open your mandarin oranges and drain the liquid completely.  I like to lay out all of our salad ingredients buffet salad so that everyone can make theirs just the way they want it. You can do it that way or add all  your fruit and veggies together and toss them in a large bowl.

Once you’ve got your lettuce, veggies and fruit all combine it’s time to top it off with the coconut shrimp and a drizzle of dressing! DELICIOUS!

When you’re ready to eat serve it up your tropical shrimp salad with a delicious glass of Black Box wine on the side for a relaxing and delicious end to a busy day!

    My goodness! I am a fan of SeaPak to begin with, but you made a whole tropical meal out of this! I’d feel like I was in the Caribbean. Nice pairings! Awesome recipe.
