So one of the big perks of having this little blog here is that once I’ve made a recipe and blogged it when I want to make it again I can find it here! I often find myself looking through old blog posts to find recipe favorites or something I haven’t made for awhile.
Well since summer is in full swing and we love a meal that is a little lighter but still delicious and filling I thought I’d whip up a batch of this awesome quinoa salad. It is so full of tasty veggies, has an awesome crunch from the cashews, a little Asian flair from the dressing and of course one of my favorite ingredients ever… quinoa!!
Well when I got to the recipe I looked at the poor picture this amazing salad was stuck with and decided it needed a serious makeover!! Photography was not my strong point in my earlier blogging days!
So this week it’s getting an update! It makes a perfect meatless meal, hearty enough to fill you up but light enough to not weigh you down, or make some up as a side dish that everyone will want seconds!!

You know I love quinoa. Combine it with some crunchy cashews, fresh veggies, and a delicious dressing…
Yum… just yum.
It is an awesome meal in itself or a great side dish.
You want to make this ASAP !
Here’s what you’ll need for this quinoa cashew and veggie salad-
For the Salad.
2- Cups cooked Quinoa- cooled
1- Cup Shredded Red Cabbage
1/2- Red Bell Pepper Diced
1- Cup Shredded Carrot
1/4- Cup Green Onions chopped
1/2 – Cup Cashews
For the Dressing
1/4 – Cup Peanut Butter
1/2- tsp ground Ginger
3- Tbsp Soy Sauce
1- Tbsp Honey
1- Tbsp Red Wine Vinegar
1- tsp Olive Oil.
Get your quinoa cooking and start chopping your veggies.
Finely chop your pepper and green onions and put them in a big bowl. Shred in your carrots. I actually chop my cabbage. Just cut the head into chunks and finely slice them, you can use a food processor or shred it if you prefer. Once you’ve got everything chopped and in the bowl it’s time to make the dressing.
While you’re making the dressing let your quinoa cool to room temperature or pop it in the fridge to cool quicker.
In a small bowl whisk together the ingredients for the dressing.
Now add the quinoa to the veggie bowl and stir until everything is well blended. Pour the dressing over and mix until all the quinoa and veggies are well coated!
Now eat your quinoa cashew and veggie salad and enjoy!!

For some reason I am always leery of peanut butter in savory recipes! I’m not sure why. I would not mind tasting it, but I hate to order something in a restaurant and not like it, or make it at home and waste the ingredients. But I love quinoa, so I might get brave and try this!
