Looking for a tasty summer treat? This pineapple upside down ice cream float is refreshing and full of awesome flavor!
Summer is in full swing around these parts! We are loving the warm air, sunshine and time outside! Now I don’t know about you but one of our favorite things about summer is ice cream!
My kids have a thing for floats… if they have the chance to combine ice cream and soda they are happy campers. There is a Chinese buffet near our house and they have been known to get a bowl of ice cream after dinner and then pour their soda into it to create a lovely, soupy, bowl of ice cream float.
When one of the boys picked cherry ice cream at the store a couple of weeks ago I was struck with this idea, because we love the flavors of a pineapple upside down cake… so why not put them together in a float!?
Now we rarely have soda in our house, so when I made the suggestion my boys jumped at the idea! Now if you’re not a soda fan or want to make a healthier version of these you could always use seltzer water in place of the soda, it would add the fizz but not the sugar!
These are super simple, and you can make one or a whole bunch!
Here’s what you’ll need for this pineapple upside down ice cream float
(this is what we used for one float- feel free to personalize!)
Cherry Ice cream- 2-3 scoops
Pineapple Juice- 1 cup
Clear Lemon Lime soda ( like 7up or Sprite) – 1/2 cup
Maraschino cherries
Pineapple rings, chunks or crushed
Ok the process is pretty self-explanatory and the beauty of things like this is that you can make them however you want! So the “recipe” we used is 2-3 scoops of ice cream into the cup first. Then add in a handful of cherries (or just a few… we really like them!), and some pineapple. Pour in the pineapple juice first then top it all off with your soda!
Stick in a spoon and a straw and enjoy!!
