If you are looking for a delicious healthy treat you’ll love these homemade key lime pie larabars! They are just the right amount of tart and sweet and super easy to make.
I discovered larabars several years ago. You see one of my biggest weaknesses in life is that I have a massive sweet tooth… seriously it’s like the size of Texas.
But I try to make healthy choices, I had gestational diabetes with my last pregnancy, and after my gall bladder removal surgery, my tolerance for sugar has gone way down… I try to listen to my body and what it seems to be telling me that sugar isn’t it’s favorite thing… although my taste buds strongly disagree.
So I’ve made some tweaks over the years, I try to substitute honey for sugar in my baking and cooking, limit myself when I indulge in sweets and when I go grocery shopping instead of grabbing a Snickers bar I like to grab something a little healthier and I love Larabars!
I don’t think I can tell you my favorite because I do love them all, I usually grab a couple when I’m at the store and keep them in my car or purse to have if I’m out and about and get hungry.
The only thing I don’t like is that they are a little pricey, which is not an issue when I’m buying them for just me but I have 3 hungry boys who when they see a snack automatically want one too!
So a started making my own. Now, these aren’t as convenient as the pre-packaged ones and don’t hold up as well in your purse, but they are a great snack to have at home or to pack for lunch.
They are super easy to make, just a handful of ingredients, a spin in the food processor and boom you’ve got key lime pie larabars!
Here’s what you’ll need to make these key lime pie Larabars-
1- Cup Cashews
1-Cup Almonds
15- Dates
Juice of 2 Limes (about 1/4 cup)- Fresh is best but you can use bottled.
a pinch of salt
8×8 pan
Parchment paper to line pan
First thing you want to do is put your dates in a bowl with just a little bit of water- it helps soften them. Let them sit for about 10 minutes.
Now put them in the bowl of your food processor and process until they are finely chopped. Add in your cashews and almonds and pulse until well blended. Next add in your lime juice and salt and blend a little more.
At this point when you pick up a little chunk of the mixture you should be able to smush it into a little ball and it will stick together well. If it’s too crumbly add a little bit of water at a time until it’s sticky. The stickiness really depends on how much moisture in your ingredients, don’t be surprised if you don’t need any water one time you make these & need some the next!
Now press it into an 8×8 inch pan lined with parchment paper. (If you don’t line it they are a lot harder to get out of the pan.)
Let them sit for an hour or so to set before cutting. I cut mine into 8 bars but it’s up to you how you slice them. It is easiest to lift the whole thing out of the pan with the parchment paper and cut them all at once.
You can wrap them individually in wax paper or plastic wrap or keep them in an airtight container. ENJOY!! I hope you love them as much as we do!!
Key Lime Pie Larabars
These homemade key lime pie Larabars are the perfect blend of sweet and tart and make a delicious healthy snack!
