These homemade pumpkin pie pop tarts are so easy to make and so much better than store bought! Delicious with a cup of coffee for a taste of fall!!
Fall is back in all it’s glory, and with it comes all things pumpkin!! I decided it was high time to whip up a batch of these, and share them again… because they are amazing!!
So here they are for this week’s
Oh how I love pumpkin season.
Pumpkin spice coffee?? Yes please!
Pumpkin muffins?? Don’t mind if I do!
And pumpkin pie Pop Tarts?? Oh I love them.
When they came out a few years ago they were hard to find so when I’d see them I’d snatch up a bunch of boxes so that I had a stash. The part of me that tries to avoid over processed, super sugary foods turned the other way and I indulged in their pumpkiny sugary goodness.
Then I realized I could make them myself. That they would be even better, even more pumpkin pie-y and I wouldn’t have to hoard them like a fiend whenever I found them.
So I made these. They are fantastic, delicious, easy and satisfy every pumpkin Pop Tart craving that you could have.
I use premade pie crust… for some reason in all my years baking and cooking, pie crust is something I’ve never attempted. If you have a killer recipe though feel free to use it instead of the store-bought stuff!
Here’s what you’ll need for your own homemade pumpkin pie pop tarts-
Pie crust- 1 pkg (2 rounds)
For the filling:
1/2 Cup Pumpkin Puree
1/4 Cup Brown Sugar
1- Tbsp Maple Syrup
1/2 – tsp Lemon Juice
1/4- tsp Pumpkin Pie Spice
For the Glaze-
1/2 – Cup Powdered Sugar
2-3 tsp Milk (use more or less depending on the consistency you’d like)
1/2 – tsp Vanilla
pinch of salt
Pre heat your oven to 350 degrees and line a baking sheet with parchment paper. Now mix all your filling ingredients together.
Now lay your pie crust rounds on top of each other and cut them in half, then cut them into fourths the other way.
This will result in some triangle shaped pop tarts. Alternately you could trim the pie crust first so they’re all square, or use cookie cutters and make fun shapes. It really doesn’t matter their shape or size.
Now put a spoonful of filling in the center of one piece and spread it around leaving about 1/4- 1/2 inch around the edge.
Dip your finger in water and run it around the edge, If you want pretty patterns in the top crust cut them now, then lay the other piece of pie crust on top. Using a fork crimp the edges so that they are nicely stuck together. If a little filling leaks out that’s ok just wipe it off.
Now stick them in the oven for 15-20 minutes or until nice and golden.
Remove from the oven and let cool.
Once they’re cooled mix up your glaze ingredients.
I drizzled it over the top using a plastic baggie with the corner cut off. You could use a spoon or a knife and cover the whole tart… it’s totally up to you!
Now sit down with a nice cup of coffee or tea and enjoy one of these homemade pumpkin pie pop tarts! … you don’t have to wait for breakfast!
