Homemade Graham Crackers

S’mores

Ohhhh yes S’mores quite possibly the best Summer treat ever. And do you know what makes them even better?

Homemade graham crackers!

Put these on your “worth making from scratch” list because boy are they good… so much better than the store bought version. They’re pretty easy too, not much harder than baking cookies.

So make some… your S’mores will thank you. (or you can eat them plain, or with peanut butter, however you love them!)

Homemade Graham Crackers

Here’s what you’ll need:

1 & 1/2 Cups All purpose Flour

1- Cup Whole Wheat Flour

1/2 Cup Wheat Germ

1-tsp Baking Soda

1- tsp Cinnamon

1- Cup Butter (2 sticks) softened – I used salted butter, if using unsalted add 1/2 tsp salt to your dough

3/4- Cup Packed Brown Sugar

2 Tbsp Honey

 

In the bowl of your mixer cream your butter until it’s nice and fluffy. Add in the brown sugar, cinnamon, honey and baking soda, mix until well blended. Now gradually add in your wheat germ and flours. Once everything is incorporated you’ll have a crumbly dough that sticks together when you squeeze it.

Now squeeze your dough into a ball and roll it out on parchment paper with a lightly floured rolling pin. You don’t want to use too much flour for rolling since the dough is kind of dry to start with. You can work in batches if it is easier.

You want to roll your dough to about 1/8 of an inch thick. If you want a softer less cracker-y more cookie like graham cracker you can make them thicker about 1/4 inch.

Using a nice sharp knife or pizza cutter divide your dough into squares. You can really make these any shape you want, I went for squares the size of store bought ones, but feel free to make them bigger or smaller.

Once cut transfer them to a parchment lined baking sheet, if you want to poke the cute little holes in them with a fork, now is the time to do that part.

Now pop your tray into the freezer for 20 minutes. Making them nice and cold will help keep their shape as they cook.

Pre-heat your oven to 35o and then bake them for 8-10 minutes, until just golden brown around the edges.

Let them cool and then enjoy!!
