Healthy Pumpkin Ice Cream

‘Tis the season to be pumpkiny fa la la la la…

Oh you know you love it! We all do pumpkin everything, it is one of the best things about Fall.

But as I mentioned in my post about substituting natural sweeteners I have a lot of trouble with sugar And all the delicious pumpkin treats are really sweet… and so most of the time I pass… regretfully.

So when I came across a recipe for ice cream using frozen bananas I wondered if you could tweak it and add some pumpkin deliciousness.

Oh you can, and the result is fantastic. It is the perfect tasty fall treat that is nice and healthy and super tasty.

Healthy Pumpkin Pie  Ice Cream - Made with bananas and pumpkin this delicious treat is dairy free and sugar free. Full of flavor and good for you too!

 

Here’s what you’ll need-

3 – Bananas

1- Cup Pumpkin Puree

1/3- Cup Maple Syrup

1 1/2 – tsp Pumpkin Pie Spice

a pinch of salt

 

Now there are two ways to approach this recipe. You can slice up the bananas then freeze them or mix everything up and freeze it.

Either way you’ll want to toss your bananas into the food processor first, then add in your pumpkin, syrup and pumpkin pie spice, and salt.

If you started with frozen bananas you can just go ahead and eat it up! If your bananas weren’t frozen you can put everything in a shallow pan and freeze it until it’s frozen through.

Once its frozen through to serve it you want to sit it out at room temperature for about 5 minutes to soften. They you can scrape across the top almost like a shaved ice but it has a much creamier texture.

Which ever approach you take you’ll end up with a delicious Fall treat that isn’t full of processed sugar!

    Count me in! Funny thing about me – amid this pumpkin craze of fall, I LEGIT like pumpkin – the actual pumpkin. A lot!

    That sounds really yummy. I like some pumpkin things, but not too sweet, like you mentioned. This sounds perfect, and my kids would like it too. Pinning it!

    We are trying to eat better at our house but I will have to tell you that we miss our ice cream. My husband would love this. Looks like a keeper recipe.
