Grilled Hatfield® Pulled Pork & Veggie Quesadillas

Summer is in full swing! The sun is shining, the days are long, and it is time to get out the grill and create some delicious dishes! I love grilling in the summer, it keeps the heat out of the house, and you can create some amazing meals like these grilled pulled pork and veggie quesadillas! These are perfect for serving up for your 4th of July gathering or any summer party… or just a weeknight dinner! They are full of fresh summer veggies and perfectly seasoned Hatfield® Marinated Pork Tenderloin, they come together so easily and are sure to be a hit with everyone!

For years I only cooked hot dogs, burgers, chicken breasts, and steak on the grill. I used it for the basics and didn’t really get into all the other deliciousness that can be grilled.

But every summer we spend a ton of time at our lake cabin, we have a yearly 4th of July gathering, we have friends come and spend the weekend, and our main source of cooking is the grill, so I had to step up my game.

Now I absolutely love to experiment with tasty grill creations and find new and delicious combinations. However, I also love products that make my life easier, and that is why I turn to Hatfield®. Their pre-marinated pork products are so easy to use they are full of flavor, and so easy to cook perfectly.

If I’m being honest, before discovering Hatfield® I often ended up with flavorless, dry, pork… not a great thing to serve your guests. But from their seasoned tenderloins, to pork chops, to ribs, it is so easy to make a delicious, easy meal without worrying so you can focus on quality time with your family and friends!

To make life super easy you can find Hatfield® products at your favorite grocery store, I pick mine up at our local Giant Eagle while shopping for all of my other cookout necessities!

For this recipe you can cook up your pork in either the crock pot or instant pot. It makes life so easy to have your pork cooking while you’re prepping all of your other ingredients and getting ready for your summer gathering!

Here’s what you’ll need for your grilled pulled pork & veggie quesadillas-

This recipe makes 4 large quesadillas

1- Hatfield® Marinated Pork Tenderloin – Texas smokehouse BBQ seasoned

1/4- Cup Apple Cider Vinegar

1- Cup BBQ Sauce

3- Small Zucchinis

1- Red Pepper

1- Yellow Pepper

8- Large Tortillas

1- Bag Shredded Sharp Cheddar Cheese

Olive Oil

Salt & Pepper

First we’re going to get your pork cooking. The instructions for the slow cooker or instant pot are the same except for cooking time.

First cut your pork loin into roughly 3 in cubes.

Now pop them into your instant pot or slow cooker, add in your apple cider vinegar and bbq sauce.

If you are using an instant pot use manual mode to set it to high for 40 minutes. Once it is done cooking let it naturally release for 10 minutes and then manually release.

If you are using a slow cooker set it to high for 6 hours.

Once your pork is cooked shred it using 2 forks. If you have a little extra liquid use a slotted spoon to remove the pork from the liquid so that your quesadillas aren’t too juicy.

Now chop your zucchini, onion and peppers into small pieces and set on a piece of foil with the edges curled up, pour over a little olive oil (about 2 tsp) and sprinkle with salt and pepper, toss to coat the veggies.

Remove the husk and silk from your corn and wrap it in foil.

Pre-heat your grill to about 400 degrees and place your veggies and corn over low flame.

Let them cook for about 1/2 an hour, stirring the veggies and turning the corn 2-3 times through the cooking process.

Once your corn and veggies are cooked through remove the corn from the cob using a sharp knife.

Lay out all your fixin’s and get ready to assemble your quesadillas.

Layer on the grilled veggies, then the corn, then the pulled pork and top it all off with a handful of cheese.

Top with another tortilla.

Oil the grill grate and place your quesadillas on the grill. Keep the flame low and grill for about 5 minutes, flip and grill another 5 minutes. I used a plate to help flip mine.

Once they are grilled let them cool for a few minutes before cutting and serving.

Now enjoy! You can serve these up with your favorite quesadilla toppings like sour cream or guacamole, or eat them just as they are! They are sure to be a hit!
