These pineapple coconut energy bites are a delicious and healthy snack! They are chock full of tropical flavor, pineapple, coconut, and macadamia nuts! They are the perfect blend of sweet and salty, and super easy!
It’s the dead of winter and here in Ohio we’re feeling it big time… it was 7 the other day… 7 lonely little freezing degrees.
I really don’t mind it that much, it’s a good excuse to hibernate, drink extra coffee, watch movies…stay in the house and out of the single degree temperatures as much as possible!
As much as I’d like to be be a bear and actually hibernate we do have to go out… a lot, life with kids and all, makes you have to get out and go!
This year my middle kiddo, Nathan, is swimming. So I’m tasked with the never ending job of keeping a teenage swimmer boy full. He is hungry All.The.Time. I’ve got my go to healthy filling snacks but I’m always trying find new healthy snacks to feed these crazy kids of mine, and keep them going!
Enter in these tasty energy balls, they are the perfect tropical taste to give you a little bit of sunshine in the middle of the single digit winter, they’re also full of tasty fruit and nuts and free of refined sugar. They are a healthy snack win!
The one challenge for these is keeping them truly refined sugar free. For that you’ll need dried pineapple that is no sugar added and sugar free coconut, both which can be hard to find. I went ahead and made my own pineapple, just threw some pineapple rings on the dehydrator, you can also find them on Amazon, or at a local health food store (which we don’t have here in my little town) Same goes for the coconut, you can hit the health food store or order online. If a little sugar doesn’t bother you you can use regular shredded coconut, it doesn’t add much.
Here’s what you’ll need for these pineapple coconut energy bites:
2 Cups- Dried Pineapple
1/2- Cup Macadamia Nuts
1/2- Cup Shredded Coconut (plus a little extra for rolling)
1/4- Cup Honey ( Local & Raw is the best)
1/2- Cup Toasted Pecans ( Just pop them in the oven at 350 for 15 minutes)
1- Tbsp Chia Seeds
This recipe is so super easy! You’ll want to combine all your ingredients except the honey, I like to toss them all in a mixing bowl as I measure.
Once you’ve got everything measured out toss it into the bowl of your food processor and chop it until its pretty finely chopped.
It suddenly becomes far less pretty, but don’t worry it tastes delicious!
Once everything is well chopped and blended add in your honey and mix well. When it’s all mixed up it’d time to roll your balls! Scoop out spoon fulls and roll them into balls, then roll the balls in shredded coconut.
That’s it! Your pineapple coconut energy bites are ready!! Warning, they’ll go super fast, but if you have any to store just pop them in an airtight container!

I love dried pineapple! Our local co-op has it, but I’m not sure if they do year-round. I will have to check.
It was a lowly 6° here yesterday. I nearly cried! We are going to Florida this weekend, and that will definitely get me in the mood for these bites.
