As a vegetarian, I often get asked, “What do you eat???”
And that question is often followed by “Don’t you miss (fill in the blank with some kind of meat, usually bacon)?”
For the question of what I eat, I often explain how I replace ground beef with lentils, cook lots of quinoa, eat garbanzo beans like it’s my job, and share lots of my tips for vegetarian eating.

But for the question of missing certain things every once in a while I do miss dishes I used to eat. After several years of being a vegetarian, I’ve tweaked most of our favorite recipes and made a meat-free version. One exception was sausage gravy. My hubby loves sausage gravy over biscuits and so I decided it was high time to make a veggie version.
Here’s the thing. Most of the time when I tweak a recipe to make it vegetarian I just swap out the meat for lentils, quinoa or beans, depending on which would taste the best. With this vegetarian sausage gravy though none of those really sounded like they’d work.
Lucky for me, and all the other vegetarians of the world, there are some great meat replacement products out there, and using them I perfected this recipe!
I will be the first to admit, it’s not pretty… but boy does it taste good! The combination of seasonings with the meatless crumbles mimics sausage beautifully and makes a delicious, hearty vegetarian sausage gravy that even meat lovers will enjoy!
Here’s what you’ll need for this vegetarian sausage gravy-
1- 12 oz pack meatless crumbles (I used the MorningStar Farms brand, I’ve also used Quorn, and Boca)
Olive Oil
1/2- tsp Onion Powder
1/2- tsp Sage
2- Tbsp Maple Syrup (the real stuff!)
Salt & Pepper to taste
1 1/2 Tbsp Flour
1 1/4- Cups Milk
First, you want to brown your crumbles in a skillet. Drizzle a little olive oil in the pan then pour in your crumbles. Break them up and heat them over med/low heat until they are warmed through.
Now add your onion powder, sage, salt, and pepper. Stir them in thoroughly, then add in your maple syrup.
Once your seasonings are added in stir it all up and taste it. This is where you can tweak the taste of your “sausage” before making it gravy. If you want any more sage, onion, or maple flavor add it in now.
In a small bowl whisk together your flour, 1/4 cup of milk and a pinch of salt and pepper. Mix it together thoroughly so that there are no lumps.
Pour your milk and flour mixture over the sausage and stir it in. Now stir in the rest of your milk. Heat over med/high heat until heated through, a little bubbly, and beginning to thicken. If you like your gravy a little more liquid you can add more milk to get the desired consistency. Stir well and you’re ready to serve!
We love this over biscuits, but it’s great over toast or even rice! This vegetarian sausage gravy makes a delicious breakfast or a hearty dinner! Your family is sure to love it!
