Easy Delicious Pineapple Upside-Down Cobbler

YUM!! All of the delicious flavor of a pineapple upside-down cake but in a super easy to make cobbler!

This pineapple upside down cobbler is so easy to make and has all the flavor of your favorite pineapple upside down cake! 

 

I had book club on Friday night.

Since I am elbows-deep in this house right now I was tempted to stop in the grocery store and grab a box of cookies. But since I’ve spent all summer without an oven to bake in I also really had the hankering to bake something.

That won out.

But since I still haven’t completely moved in and don’t have all of my kitchen equipment  I knew it needed to be something easy!

I credit this cobbler making technique to my dear dear friend Jesse who is a Georgia peach… and she makes killer peach cobbler the way I made this.

Well, I decided that it could be adapted and have all the fabulous taste of pineapple upside-down cake without as much effort.

So I made it.

It is easy, it is delicious, and it was a hit with my book club girls!

This pineapple upside down cobbler is such an easy dessert!! All the flavor of a pineapple upside-down cake in a super easy to make cobbler! It comes together in minutes!

 

 

 

Here’s what you’ll need for this pineapple upside down cobbler-

2- Cans Chunk Pineapple w/the juice

10- Maraschino Cherries cut in half (you can use more if you’re a big fan of cherries!)

1/3- Cup Brown Sugar

1/2- Box Cake Mix- White or Yellow

6- Tbsp  of Butter Melted

 

This is so easy to put together. Grease up a 9×13 inch baking pan.  Get your oven pre-heating to 350 Now pour in both cans of pineapple juice and all. Now distribute the cherries evenly around the pineapple.

Now sprinkle the brown sugar all over the pineapple and cherries.

Next pour the cake mix (dry) all across the top. Make sure it’s nice an even. It kind of floats there on top of the pineapple you can use a fork to even it out if necessary.

Now pour your melted butter evenly across the top of the cake mix. It’s ok if there are some small areas that remain dry, just try to get it as even as possible.

Now pop it in the oven for about 45 min- 1 hr. or until the top is nice an bubbly and golden brown.

You can serve it plain or top it with ice cream or whipped cream… the choice is yours!!

There you have it! Super easy to make and full of flavor! This pineapple upside down cobbler will become one of your go-to desserts!
