Easy as Cherry Pie Bars (copy cat Larabars)

I have a sweet tooth the size of Texas…or maybe North America…its big.

Because I have very little will power, I try and find alternatives to satisfy it besides chocolate, cookies, brownies… all those yummy sweet things.

Enter these bars.

They are delicious, just sweet enough, chewy, and perfect satisfy  a sweet craving.

If you’ve ever had a Cherry Pie Larabar and loved it, these are for you. They’re just as good and you can make a whole bunch for the cost of a couple Larabars!

Homemade Cherry Pie Larabars

 

 

 

Here’s what you’ll need

 

1-Cup pitted dates

1-Cup dried cherries (some dried cherries have sugar some don’t, it doesn’t matter for this recipe, just whatever your preference is)

1- Cup almonds (plain)
1-3 tsp water
This recipe will make about 8 bars, depending on how big you cut them. Alternately you can roll them into balls, which are great for the kiddos.
Throw your almonds in the food processor and chop them until they are pretty finely ground.
Next add your dates and cherries. I have to say I didn’t use dates for a long time because I think they look like some kind of bug… I had to get over that because they are tasty!
Chop everything up together until its nicely mixed.
Now pinch a chunk out. If it is sticky enough to hold together well then don’t add water. If it’s a little dry add water a tsp at a time until it will hold together.
Now press it firmly into an 8×8 in greased pan.  I used butter to grease mine, you could also line it with parchment paper.
Now you can cut them up into bars or squares, whatever your little heart desires. I find that they are not as squishy if you let them sit for about 1/2 an hour. But I can’t really wait that long to dig in!! You can individually wrap them or just keep the pan covered so that they don’t dry out.
Now enjoy!! Satisfy your sweet tooth without the guilt!! You can even share them with your kids if you’re feeling  generous, they love them!
