One of my favorite things about the holidays is entertaining!! I love baking cookies, creating spreads of treats, snacks, and drinks for my family and friends! This corn dip is always a hit! It comes together quickly and is perfect on chips or crackers!
There are so many things to love about this time of year, but one of my top things to love is all the FOOD! Seriously, starting with Thanksgiving, and on through the new year its delicious treats, drinks and tastiness! This time of year I put the leaf in my dining room table and just keep it nice and big and ready for food!
Even for small gatherings like family game nights. I like to set out a spread of dips, chips, crackers, drinks and fun appetizers!
For our last gathering I headed to Giant Eagle, my favorite place to stock up on tasty treats and great ingredients!
I knew I would be whipping up a batch of this dip but I couldn’t pass up a couple of varieties of Market District Hummus, a few boxes of Market District Frozen Appetizers, and of course some tortilla chips, Triscuits, and Wheat Thins for dipping!!
Add to that a fun variety of drinks, Giant Eagle sodas, Tropicana juice in orange and watermelon, and Dannon Light & Fit Yogurt Drinks (a favorite of my little man!)
For a low-key gathering I just spread it all out on the kitchen island! If it’s more formal I break out the holiday table-cloth, special serving platters, and I even have holiday wine glasses.
The great thing about choosing appetizers, dips, crackers and chips, like these is that you can dress them up or keep them casual depending on your party preference!
What I love most about this corn dip is that it is hearty enough to top a Triscuit cracker but soft and cheesy enough to dip a chip into, it’s pretty much perfect!
Here’s what you’ll need :
1- 8 oz. pkg Cream Cheese (softened)
1- 14 oz. pkg Birds Eye Baby Gold & White Corn
1- Red Pepper
4- Green Onions
1- Cup Shredded Cheddar Cheese
1/2- Cup Sour Cream
2- tsp Garlic Powder
1/2- tsp Salt
The first thing you want to do is put your corn in a strainer and let it thaw, if you’re in a hurry you can run warm water over it, then let it drip dry. You want it nicely thawed before making your dip.
Now get your oven heating to 375 and grease an 8×8 pan.
While the corn is thawing finely chop your red pepper, and green onions, you’ll want to use the whole white part and about 1/2 of the green.
Now in a mixing bowl stir your cream cheese, garlic, salt, and sour cream together. Next add in your peppers, onions, cheddar cheese, and corn in. Stir until everything is well incorporated.
Once it’s all well blended press the mixture into your prepared pan and pop it into the oven.
Bake for 20-30 minutes until it’s nice and bubbly and turning golden brown around the edge.
Let it cool a little and serve! This corn dip is best warm, if you have leftovers you can just pop them in the microwave and heat them up the next day!
