I have mentioned it time and time again, I am a huge quinoa fan.
So when I found out that there was such thing as puffed (or popped) quinoa I was excited to try it!
And so these tasty treats were born!
Here’s what you’ll need-
1 & 1/2 Cups Puffed Quinoa ( you can buy it, or here some great instructions on how to make it)
1/2 Cup Peanut Butter
1/8 Cup Honey
1- tsp Vanilla
2- Tbsp Coconut Oil
pinch of salt
Combine your peanut butter, honey, coconut oil, vanilla and salt in a sauce pan. Heat over med/low heat for about 5 minutes stirring constantly until well blended.
Pour in your quinoa and stir until it is well coated.
Now using a small dough scoop, scoop it out and place on a cookie sheet. (you can also use a spoon, or roll it into balls)
Pop them in the fridge until they are set (about an hour) and then you can put them in a container and store them in the fridge. These make a great snack for anytime, just a little sweet, a little crunch! You’ll love them!

WOW– These look great. I never considered using quinoa is dessert recipes. I am a HUGE peanut butter fan and I have all these ingredients in my cupboard! I love that it’s no bake, perfect for summer so I don’t have to heat my house with the oven!!

I’ve always used quinoa as a dinner or side dish, I’ve just recently started using in sweets and I’m experimenting with some breakfast recipes too!
