Chocolate Quinoa Energy Bites

I have sung the praises and my love of quinoa many many times here on this blog. It is by far one of my favorite ingredients, when Aldi’s started carrying it all the time I literally did a happy dance in the store… sometimes I think I’m cool, then I do things like that and realize I.Am.Not.

Anyhow, I’ve tried it in several sweet things over the years and haven’t been thrilled with most of them. They’re ok, but nothing that I’m ready to celebrate with another dorky happy dance.

But these? Well let’s just say I would have totally eaten the whole plate if my children didn’t like them just as much as I do! They are just the perfect amount of sweet, nice and fudgy and guilt free… kind of perfect if you ask me!

Are you looking for a delicious snack that is packed with nutrition but tastes like a treat These are perfect! Made with quinoa with just enough sweetness to satisify your cravings!

 

Here’s what you’ll need:

1- Cup Cooked Quinoa (cooled)

1/2-Cup Old Fashioned Oats

1/3- Cup Ground Flax or Wheat Germ

1-Tbsp Chia Seeds

1-Cup Peanut Butter (natural)

1/4- Cup Honey

1/4- Cup Cocoa

1/2- tsp Vanilla

Pinch of Salt

 

These are about as simple as it gets. Combine all your ingredients in a big bowl and mix until everything is evenly incorporated. Now cover the bowl and pop it in the oven for 30 minutes.

Now scoop out the mixture in Tablespoon size scoops and roll into balls. You can make them bigger or smaller if you’d like, but I used a Tbsp size dough scoop and it works really well.

Once they’re rolled into balls they are ready to eat! If you don’t eat them all at once like we do you can keep them in a sealed container in the fridge!

    What exactly does “Now cover the bowl and pop it in the oven for 30 minutes” mean? From your chocolate and quinoa energy bites recipe. There is no mention of heating the oven.. would you mind clarifying that? I’d love to try this recipe soon! Thank you!
