This Fritata recipe is full of delicious fresh veggies, eggs and cheese! It makes the perfect breakfast, brunch or even dinner! Make clean up afterword a breeze with my printable clean kitchen checklist and Scotch-Brite® Scrubbing Dish Cloths!
This time of year my chickens are laying like crazy! I have a million eggs and luckily it’s also the season with lots and lots of veggies. The two combined make for a great reason to whip up a delicious fritatta!
Now before I get started with the recipe I’ll tell you a little secret. As much as I love using my garden fresh veggies and my lovely chickens eggs to make dishes like this… I hate cleaning them up. Hate, hate, hate it. Seriously isn’t egg the worst thing to try and scrub off a pan? Even a greased non stick pan egg sticks like crazy. They really should figure out what is in them… they may have a new super glue.
I have been known to let a pan “soak” overnight… aka let it sit in the sink until my hubby gets sick of looking at it. Or I run it through the dishwasher… multiple times. Even my trusty 4-legged “prewash” cycle has trouble getting baked on bits of egg off.
So I’m going to introduce you to my new best cleaning friend- the Scotch-Brite® Scrubbing Dish Cloth. You can pick up these awesome little helpers at your local Walmart. The best part about these little cloths is that they have two sides. One is a soft cloth perfect for wiping counters, stoves etc. The other has these awesome little scrubbing dots that are super tough! They scrub through cooked on messes but are gentle enough to use on non stick pans… yes awesome!! The little dots don’t get all gunky like sponges do… you know how all the yucky grossness gets all gummied up in the sponge? Not these!

Now onto the recipe!
This makes 2 pie pans of fritatta – you could also put it all in a 13×9 pan but baking times may vary
Here’s what you’ll need –
1- Red Pepper
5- Green Onions
3- Cloves Garlic
5-6oz- Fresh Spinach
1-pt Grape Tomatoes
2-Tbsp Olive Oil
1- Cup Cottage Cheese
2- Cups Shredded Sharp Cheddar
10-Eggs
Salt & pepper to taste
Pinch of Nutmeg
Now the first thing you need to do is get your oven preheating to 350, and lightly grease your pans.
Now finely chop your red pepper and green onions, quarter your grape tomatoes (unless they’re big and you want to chop them even smaller). Roughly chop your spinach and finely chop or press your garlic.
In a pan heat up your olive oil. Now add in your garlic and onions and cook for a few minutes, until soft. Next toss in your red peppers and cook a few more minutes. Now add in your tomatoes and spinach. Cook for just a minute or two, until the spinach just begins to wilt. Sprinkle in a little nutmeg, salt and pepper.
In a large bowl beat your eggs well. Now add in your cottage cheese and cheddar and stir until evenly mixed. Throw in a pinch of salt and pepper. Now add in your cooked veggies and mix until everything is well incorporated.
Now pour your mixture into your prepared pans and pop them in the oven. Bake for 45 min to 1 hour. It is done when it is slightly golden brown on the top and no longer wet in the middle.
Let cool a little and then it’s time to serve it up!

Mm.. it uses cottage cheese instead of cream cheese. I’m a fan! Any egg dishes excite me, but I agree about cleaning egg off the pan.
I got this last month for a messy brownies recipe and they worked well. I got them in the dark blue color!
