Summer for my family means lots of fun and entertaining. Our lake cabin becomes a gathering place for Memorial Day, The 4th of July, my middle kiddos birthday & any other occasion that we can celebrate!
This year it will also be the location of a graduation party for the teenager!
I’ve already started planning for the graduation party, it will be bigger than most of our gatherings and so planning ahead is going to be key.
One thing I knew I’d want to do is incorporate his school colors of red and white as much as possible. I’m also a big fan of fresh Summer produce and when I saw fresh strawberries in the store I had the awesome idea for these fruit skewers!!
The cool thing about these is that you can mix an match fruit to make almost any color combinations for any school colors! You can add in other things like cake and brownies too for even more variations!
I made several different combinations to inspire you the possibilities are endless!
Here’s some ideas to use for different colors
Red- strawberries, raspberries, watermelon
Yellow/Gold- pineapple, starfruit
Green- kiwi, honeydew, grapes
Purple- grapes, blackberries
Black – black berries, dark chocolate brownies
White- bananas, pound cake, apples (peeled)
Orange- clementine sections, cantaloupe
I also whipped up a fruit dip that you can tweak with the fruit of your choice if you want it to be color coordinated!
Here’s how to make them both!
To make the skewers-
Fruit of your choice
scissors to trim the skewers
For the dip-
3/4 Cup – Fruit of your choice
4 oz- Cream Cheese softened
1/2 Cup Greek yogurt
1-2 Tbsp Sugar (I used cane sugar)
1- tsp vanilla
The skewers are pretty self explanatory but I’ve got a few tips to share. First- try and make you fruit pieces as uniform as possible, that makes the kabobs a little more balanced and easier to eat. You can save any pieces you trim off for your fruit dip (or just eat them!) Second- if you want your skewers to be shorter the best way to cut them is to use a pair of scissors to score them and then just snap them apart.
Now you can add on your fruit in pretty patterns!
To make the dip-
First finely chop your fruit and put it in a small bowl. Now sprinkle your vanilla and sugar over the fruit . You can use one or two tablespoons depending on the sweetness of the fruit you’re using. You can always add a little more later. Set that aside for a few minutes, the sugar will pull the juices out of the fruit to help make the dip super tasty.
In the bowl of an electric mixer blend together your cream cheese and Greek yogurt on high until it is nicely blended and fluffy. Add in your fruit and sugar mixture and mix on low/med until well incorporated.
That’s it!! Super easy right!?!
Now one of the hard parts about entertaining can be storing and transporting your delicious snacks and dips, but I have an easy solution for you!!
Rubbermaid has this awesome Party Platter that comes in super fun Summer colors such as Lagoon Blue and Calypso Coral! It is perfect for these fruit skewers and dip! (You can find out more about these great Rubbermaid products here)
The separate lid for the dip container is super, no risk of the dip coming out if you’re transporting it! Also if you’ve got leftover dip you can pop it in the fridge and wash up the rest of the platter!
Now another great way to incorporate your school or party colors into your refreshments is in the drinks! You can do it simply using more of the fruit and berries you’ve already go on hand for your skewers!
Put small berries or finely chopped fruit in a ice cube tray and add water.
Once they are nicely frozen pop them in a pitcher of water or your favorite clear soda! Make sure you pick up a Rubbermaid Pitcher to match your platter! These are nice an big to hold plenty of drinks for your gathering so you can focus on your friends not refilling!
