My dear hubby hates zucchini.
Hates it. He believes that people feel obligated to plant it just because they have a garden, but that nobody actually likes it.
Sometimes his take on things is a bit wacky, actually a lot of times his take on things is a lot wacky. He’s a big weirdo.
Because I love zucchini, and so do my kids, and my parents… I could list many people I know who do. Except for him, his momma didn’t raise him right!
So when an old friend made this delicious zucchini and posted its picture on Facebook I knew I had to try it, and serve it for dinner, to attempt to convert my man.
The great part about this is you can make as many servings as you need!
Here’s what you’ll need:
Zucchini- nice small ones, about 6-8 inches long are the best.
Tomatoes- Roma work really well, you’ll need about a tomato per zucchini
Olive Oil
Pesto Sauce- I used store-bought, but if you make it even better!
Garlic Powder
Salt & Pepper
Mozzarella Cheese- I used fresh and sliced it, you can use shredded too.
If grilling I highly recommend non-stick foil
Take your zucchini and chop off the top to get rid of the stem. Now split them lengthwise down the middle. Now brush some olive oil on both sides, and sprinkle with garlic powder, salt, and pepper. Slice your tomatoes and cheese and have them ready.
Pre-heat your grill, and then set your flame to medium (or you can use the oven set at 400) Grill them on one side for about 5 minutes and then flip and grill for anther 5. I like mine to still be a little firm, if you like your zucchini cooked a little more just keep it on.
Once it’s cooked to your liking spread the tops generously with pesto, top with cheese and tomatoes. Keep them on the grill for another 3-5 minutes or until the cheese gets nice and melty. Serve immediately & enjoy.

Ahh.. fresh, sliced mozzarella? My favorite.
I really love zucchini, but my husband grills it to give it that special summer flair!
