Do you love Mexican 7 layer dip? It has always been a favorite of mine at picnics and potlucks! I’ve taken the flavor of that great dip and created this Mexican 7 layer pasta salad! All the tastes of the dip in an amazing salad!
I have a confession to make… I am a sucker for pot lucks, and picnics where everyone brings a dish. Inevitably someone brings those cheesy potatoes with corn flakes on top, there’s always a bunch of delicious desserts, and if you’re lucky someone has made 7 layer dip.
Chips and salsa are a staple in my house, and so are tacos… there’s something about the flavor combination in the 7 layer dip that takes all the deliciousness and combines into one tasty snack!
Well with summer upon us, and picnics and pot lucks to be had I decided that I was going to take this favorite of mine and upgrade it. See I’ve always been tempted to just eat the dip with a spoon, so I added pasta. Now it is a pasta salad paired with Mexican 7 layer dip and perfectly acceptable to just dig in with a spoon!!
The really great thing about this is that it is incredibly easy to make. Most everything you can buy pre-made so really you only have to do a little chopping and boil some noodles… super easy!
I made it for a party I had a couple of weeks ago and it was a big hit. I was proud of myself for not eating it all before my guests got there, and they all really enjoyed it!
Here’s what you’ll need for this Mexican 7 layer pasta salad –
1- Can refried beans
1- Jar Salsa
1 1/2- Cup Shredded Cheddar Cheese
1- Cup Shredded Lettuce
3- Green Onions finely sliced
1- Can Black Olives – sliced
1- pkg Guacamole
1- pkg Taco Seasoning
1- Cup Sour Cream
1- Cup Mayo
1- Box Pasta- I used Ditalini, they’re little noodles, you could use elbow macaroni
a 13×9 inch pan to assemble your salad
First thing you want to do is get your pasta cooking. Just cook it according to the package directions.
Meanwhile mix your mayo, sour cream, and taco seasoning together in a large bowl.
Once your pasta is cooked put it in a colander to drain and rinse it with cold water until the pasta is cooled, then put it in your bowl with the mayo mixture and stir until the pasta is well coated.
Now in the bottom of your pan spread a layer of refried beans
Next pour in your pasta, then layer on your guacamole, then salsa.
Now sprinkle on your shredded cheese, then your lettuce, green onions and black olives!
Now you can respectably dish yourself out a heaping helping of your favorite dip because it’s now a Mexican 7 layer pasta salad! Take this to your next picnic or pot luck and your friends will thank you!!
