Well…. mostly… here in Ohio it is trying it’s best and we’re finally seeing the light at the end of the coldish/rainy spring days. It’s getting to be time for sunshine, picnics, and trips to our lake cabin for weekend fun.
Oh and to be done with school…. seriously, as a homeschool mom I may look forward to the end of the school year more than my children do!!
One of my very favorite things about summer is campfires. I love when the air is just a little chilly but next to the fire is nice and warm, I love s’mores, and I love the smokey smell left on your clothes when you walk away.
Believe it or not I am actually sitting next to one right now, it’s Saturday evening at the lake and my dogs and I are chilling by the fire with a cup of coffee… it is seriously the best “office” ever.
It seems the perfect place to be writing this post, because these little cupcakes are just a sweet mini version of a campfire. They are great for any summer party, camp outs, even bake sales, anywhere you could use a campfire cupcake… which is really any time!!
They’re actually really simple to make too, the end result looks really special and elaborate, but the process is super simple!
You can use any cupcakes or icing you’d like and turn them into campfire cupcakes with this fun technique!
Here’s how to make these campfire cupcakes!
Cupcakes – cooled
Chocolate icing- whatever your favorite recipe
Hard candies in red, yellow and orange- I used Lifesavers
Rolled wafer cookies- I got mine at Aldi
A Silpat or Parchment Paper
A bamboo skewer or toothpick
A large, sharp knife
You want to start out with cooled, frosted cupcakes ready to go! Then it’s time to create a sweet campfire!
The first thing you’ll want to do is line a baking sheet with either parchment paper or a Silpat (its a silicone liner, I love mine!!)
Next preheat your oven to 375.
Now arrange your hard candies on your prepared cookie sheet I used 9 Lifesaver and arranged them in 2 rows. It made enough “fire” for 6 cupcakes. If you’re doing more I’d suggest working in small batches at a time.
Now pop the try into the oven for about 10 minutes. Keep an eye on your candies, you’ll know they’re ready when they look like this.
Pull them out of the oven and using a bamboo skewer or a toothpick swirl the colors together and drag the edges out to create “flames”
Do that all around the sides until you have what looks like a giant splat!
While you’re candy is still a little warm, press a knife in it in between the flames where you’ll want to break the candy when it cools. Scoring it a little helps it to break where you want it to when it’s time.
Once your candy is cooled it’s time to put your campfire cupcakes together!
You can cut or break your rolled cookies into thirds. I used two different flavors so I’d have a variety of “logs” for my campfire. Once you have your logs ready break your cooled candy flames into pieces.
Now it’s just a matter of arranging them how you’d like I arranged my cookies first and then simply pushed the flames down into the cupcakes! I found three cookie pieces seemed to work the best.
You can play around with them and have fun until you get them how you’d like!
The biggest draw back to these is storing them. There really isn’t an easy way to wrap them up or store them so they’re best made the day you are serving them. You can always bake and frost the cupcakes ahead of time and then decorate them the day of your event!
