How delicious are pomegranates??
I honestly had never eaten one until about 4 years ago, and when I bought it I had no idea how to open it or eat it. The first time I ate one I spit all the seeds out like I was eating sunflower seeds and they were the shells. Then I started seeing them on salads and in recipes and thought, “Duh! the whole thing is edible!”
Now they’re a staple in my house, when they appear in the grocery stores we buy them up and everyone loves them! Until this salad though I’ve never put them in a recipe, just enjoyed them fresh and by themselves.
I have to tell you I’ll be tossing them on salads from here on out! They add such delicious flavor and texture a little tart, a little sweet a whole lot of tastiness!
This salad recipe makes enough for a big salad for one or a side salad for 2 or 3. You can also throw in some quinoa or top it with salmon or chicken to make it a complete meal.
I used pecans in this salad and I love love them toasted. If you don’t want to toast yours you can skip that part!
Here’s what you’ll need for this delicious kale salad!
2- Cups Chopped Kale
1/2- Apple chopped (I used a Fiji – use your favorite)
1/4- Cup Pomegranate Seeds
1/8- Cup Toasted Pecans Chopped (to toast just pop them into the oven at 350 for 10-15 minutes)
1/8 – Cup Feta Cheese
For the Dressing-
1- Tbsp. Olive Oil
1- Tbsp Balsamic Vinegar
1- Tbsp Maple Syrup
1- tsp Lime Juice
In a big bowl combine your kale, apple, and pomegranate. Sprinkle your pecans and feta over the top.
In a smaller bowl whisk together your olive oil, balsamic vinegar, syrup and lime until well incorporated.
Drizzle your dressing over the salad and serve immediately!
If you want to make this ahead of time or take it with you, just keep your dressing separate and add it right before eating or serving!
