This saltine toffee is a MUST HAVE on your Christmas cookie list… it is the perfect combination of sweet and salty, crunchy, and delicious!
Many many moons ago I was at a holiday party and casually strolled over to the cookie table. Now when faced with a table full of cookies I always feel the need to sample each one… it’s only polite! I grabbed a piece of a fairly plain looking chocolate treat and added it to my plate.
Well… when I ate it I decided it may possibly be the tastiest thing I’d ever eaten!! Now I should interject here that I am a huge fan of sweet and salty I mean it’s the perfect flavor combination! So I ate this piece of deliciousness, and a couple more, and tried to find out who had made it?? I could tell it was crackers and obviously chocolate but I needed to find out how to make my own addictive deliciousness!
However, I left the gathering without that information… and was very sad.
You see, my friends, this was pre-Pinterest, pre- amazing blogs… still in the dark ages of dial up when the internet was not nearly as useful as it is now! So I was left just hoping one day I would come across these tasty treats again.
Well, as luck would have it about a year later my Grandma gifted me with a recipe magazine subscription for Christmas, in one of the first issues was a recipe sent in by a reader for Saltine Toffee. It was tucked up in the corner of a page, no picture or anything, but I knew!! THIS IS IT!!!
Well that year a tradition was born, and still lives on! If you’ve ever been to my house during the Christmas season, or if I’ve ever given you a plate of cookies you’ve had this “Christmas Crack!”
It earned that nickname because, well, you can’t stop eating it, it is so addictive in its sweet and salty perfection. I seriously can’t keep it in my house unless I hide it!!
Want to know the best part? It is so super easy to make!! Just a few ingredients and about 20 minutes and you’ve got dessert perfection!
Here’s what you’ll need-
40- Saltine Crackers
3/4- Cup Brown Sugar
1- Cup (2 sticks) Butter
2- Cups Chocolate Chips ( Semi-sweet or Milk Chocolate)
Baking sheet & Aluminum Foil
First thing you’ll want to do is get you oven preheating to 350.
Next you want to line your baking sheet with foil, if your baking sheet is slightly damp the foil will stick to it very nicely.
Now line up your crackers in nice neat rows.
In a medium size saucepan over med/high heat heat your butter and sugar. You want to heat it until it is a nice medium boil. It gets to looking a little foamy and will grow a little bit, just let it roll and give it an occasional stir. You want to let it boil for 5-6 minutes.
Once it’s boiled for about 5 minutes pour the mixture over your crackers and spread it out with a spatula.
Now pop it into the oven for 7 minutes. The butter/sugar mixture will get all bubbly again. After 7 minutes pull it out of the oven and sprinkle the top evenly with your chocolate chips.
Now a word about chocolate chips here – in this recipe some melt better than others, milk chocolate tends to melt better than dark chocolate, and some brands tend to melt more than others. It’s a matter of experimenting with what works, I used a store brand for this recipe in semi-sweet. If they don’t melt there is no need to panic, this still tastes just as good with chocolate chips on top instead of spread out chocolate!
Anyway, after you’ve sprinkled the chocolate chips on, pop the tray back in the oven for another 5-7 minutes. When you pull it out use a spatula to spread the melted chips out over the surface, if you need to let them sit a minute to get nice and melty.
Once your chocolate is all spread out you can pop the whole tray in the fridge until everything sets up.
When it’s all cooled off it’s ready to eat, delicious saltine toffee! Just break it into pieces and enjoy!!
