Have you seen them?? The school supplies in the store?? The knowledge that school is starting again is suddenly hard to ignore! Where oh where did the summer go?
As a homeschool mom I often think that I love summer vacation more than my kids, it lets me take off my teacher hat and have one less thing to do for 3 glorious months! But then… as all good things… it comes to an end.
As the school year starts one thing I like to do to simplify and get ready is to have well stocked food! My boys are always hungry so making sure that there are lots of snacks and easy to grab, nutritious and hearty makes the transition back to school much easier. Not to mention Anthony will be in college this fall, plus working, so having food that he can grab in between everything else will make his life easier too!
As always I headed to my favorite grocery store, Giant Eagle, to grab ingredients for these homemade bars, plus other snacks and drinks to stock the pantry.
Since there isn’t always time to make something from scratch I picked up a box of Nature’s Basket Fruit and Grain Bars one of our favorite to-go snacks, and another grab and go favorite a box of Capri Sun, plus an extra bag of Goldfish Crackers to snack on! Even more convenient everything I needed for this recipe & the Fruit and Grain bars are all in the same isle at my local Giant Eagle!
Snackapalooza folks… perfect for back to school and a house full of hungry boys!
These bars are super easy to make and are nice and hearty, perfect for a snack or lunchbox treat!
Here’s what you’ll need-
3/4- Cup JIF Peanut Butter ( I used creamy but go ahead & use chunky if you’d like!)
3/4- Cup Honey
3 1/2- Cups Old Fashoined Oats
1/4- Cup Flour
1/4- Cup Butter (melted)
1- tsp Vanilla
1/2 – tsp Salt
1 1/2- Cup Pretzel Goldfish
1- Cup Smuckers Strawberry Simply Fruit or Jam
First you’ll want to preheat your oven to 350 and line a 8×8 or 9×9 inch pan with parchment (if you don’t have parchment you can butter it really well)
In a large bowl combine your melted butter, peanut butter, honey, salt and vanilla. Mix it really well until smooth.
Now mix in your egg until it’s well incorporated.
Pour in your oatmeal and flour and mix until the oatmeal is evenly coated. Now put in your Goldfish and stir until they’re evenly distributed.
Press half of your oatmeal mixture into the bottom of your prepared pan, then evenly spread your jam across the top of the oatmeal layer.
Now spread the rest of the oatmeal mixture across the top.
Now pop it in the oven for 25-30 minutes or until set and the top is just turning golden brown.
Let them cool completely before cutting and serving… if you can’t wait they’ll just be a little messy! Enjoy the PB & J with a touch of salty!
