This weekend we opened up our cabin, the weather was perfect, the lake was beautiful… it was fantastic.
I try to plan our food for our lake weekends and load up on easy to grab and eat meals and treats for my hungry boys who come and go quickly all day long. I made up a batch of these granola bars and took up with us. They’re a perfect snack… or breakfast… whenever they need to fill their staaarrrvvinng bellies.
So I decided to go ahead and update them here. I made my latest batch with sucanat instead of brown sugar and was super pleased with the results!
If you’ve read my blog for awhile, you know I have a thing for quinoa.
While this tasty grain is great served as a side dish, it is also great to add in to other things to boost their fiber, protein and overall nutrition.
My kids love granola bars so combining healthy quinoa with the grab and go kid friendly granola bar, is a win win!
Spread the oats and quinoa out on a baking sheet and toast in the oven at 350 for 8-10 minutes.
Combine PB, Honey, Brown Sugar, and salt in a sauce pan over medium heat. Heat until boiling and remove from heat.
Combine all the dry ingredients, except chocolate chips, in a bowl and pour PB mixture over. Stir until everything is well mixed.
Press firmly into a greased 9×13 inch baking pan, Bake for 20 minutes at 350.
Remove from oven and immediately sprinkle chocolate chips evenly across the top. Let them melt for about 3-4 minutes and then spread over the granola bars.
Let cool completely, cut into bars ( I cut them into 16 bars but you can make them any size you’d like).
Keep them in an air tight container or wrap them individually for a grab and go snack!
