I love social media.
As much as I’d like to say I could take it or leave it, I’ll be honest here and say I really do love it.
Except for sometimes when it is taken over by people arguing over the color of dresses, lots of political issues… or football… then it annoys me.
But sometimes something really cool happens. Like a friend from high school who is the nanny for another high school friend makes muffins with the kids and then posts the awesome muffin recipe.
It sounds good so you decide to try it.
Then suddenly you are eating the same muffins as your friends from 20 years ago who live hundreds of miles away.
I’m very easily amused, but that is cool.
And these muffins are delicious…really delicious.
Seriously, If I could find a nanny that came to my house, took my children strawberry picking, and then baked these up, I may consider upgrading her from nanny to sister-wife.
Here’s what you’ll need-
2- Cups of Flour
1-tsp Baking Soda
1-tsp Baking Powder
1/4- tsp Salt
6- Tbsp Coconut Oil ( I love coconut oil, but you could also use butter)
1- Cup Sugar
1/2- Cup Lemon Juice- fresh is best, it’s about 3 lemons
1 & 1/2- Cup Finely Chopped Strawberries
First get your oven pre-heating to 375 and line your muffin tin with liners or grease it. I made these mini muffins but full size work just fine too.
In you mixer cream together your sugar & coconut oil. Add in the eggs and mix well. Add in your flour, baking soda, baking power, salt, and vanilla. Gradually pour in your lemon juice. Once everything is well mixed gently fold in your strawberries.
Scoop your batter into your prepared muffin pan.
For the mini muffins these took 15-17 minutes, for bigger ones they take 20-25. They turn a little golden around the edges when they are done and a toothpick will come out clean.
Let them cool and then enjoy!!
