Recently I posted my recipe for Homemade Cookie Crisp Cereal. Someone commented and said that they’d never made any cereal except granola.
Well I’d never made granola….
The very same day I came across a recipe for skillet granola from The Seasoned Mom.
I took it as a sign. So I made some. I did make some changes from her original recipe and tweaked it a bit I’ve now made this recipe twice… in a week… and both times it has disappeared in hours.
It’s good stuff… and so easy to make… win-win!
Here’s what you’ll need-
3- Tbsp. Coconut Oil
5- Tbsp Honey
1/4 – Cup Chopped Pecans
1- tsp. Cinnamon
1/2- tsp. Salt
1/2- Cup Coconut
2- Old Fashioned Rolled Oats
In a large skillet melt your coconut oil. Add in your honey, pecans, cinnamon and salt. Heat over low/medium heat for 2 minutes until just a little bubbly. Now add in your oats and coconut and continue heating for 5-10 minutes stirring frequently until golden brown.
Now spread it evenly on a cookie sheet. Let it cool completely.
It’s super tasty by itself, over yogurt, over fruit… however you love your granola!
