My kids love cereal. Between the three of them a box lasts maybe a day… 2 tops. They especially love any kind that has a lot of sugar, preferably chocolate and very little nutritional value… the good kinds.
Well, as I do with many things, I decided to try my hand at making my own.
It didn’t disappoint! Even though it is free of refined sugar (except what is in the chocolate chips) and made with whole wheat flour these little cookies are just sweet enough to quite a cereal craving without sacrificing taste.
So when my kids (and hubby) devoured the whole batch in one day I was ok with it… Ok I helped too, but I didn’t even bother with milk, I just ate them off the cookie sheet!
Here’s what you’ll need
1/2 Cup Coconut Oil
1/4 Cup Maple Syrup
1 – Cup Whole Wheat Flour
1- tsp Vanilla
1- Cup Old Fashioned Oats
1/4 – tsp Salt
1/2 – tsp Baking Soda
3/4- Cup Mini Chocolate Chips
In your mixer cream together your coconut oil, and syrup. In a separate bowl mix together your flour, oatmeal, salt and baking soda.
Add your egg and vanilla to the coconut oil mixture and mix until well blended. Add in your oatmeal mixture a little at a time allowing it to incorporate.
Now fold in your chocolate chips until well mixed.
To make shaping these little cookies easier roll the dough into long cylinders about as big around as a nickel. I made 3 with my dough, that way they’re easy to handle.
Wrap them in plastic wrap or wax paper and pop them in the fridge for about 20-30 minutes.
Get your oven preheating to 350 and if you want (this is optional) line a baking sheet with parchment paper.
Now take one of your dough logs and slice it into 1/2 inch pieces and place them on your baking sheet. These don’t grow much so you don’t have to leave a ton of space in between them.
Stick them in the oven for 5-6 minutes or until slightly golden brown. Your cooking time may very depending on the thickness of your cookies so keep an eye on them as they bake.
Let them cool completely and store in an airtight container.
Serve them up in the morning with some milk and watch your kids gobble them up!
